I know I am coming late to the concept of a cauliflower-crust pizza, but its because I wanted to try it myself and develop a recipe that I know is tasty and that works! Follow my version below and your gut will thank you: it’s not only high in fibre, but with the addition of tasty, low carb toppings, you could fool yourself and your family that you are having The Real Thing. (1 pizza = 2 servings, and it comes in at 11g carbs per serving (including toppings). If you aren’t convinced, do try out my Fathead Pizza Base, which is just as delicious!

Bribing Funnyman with my brownies is a nifty way to get him to do stuff around the house. I learnt this in wife-training school. He loves these keto brownies. They are the perfect size to hit the sweet spot and they make great fat bombs. I don’t have a sweet tooth at all, so making a batch of these along with other sweet treats for him is my way of showing him how much I appreciate him going on this Keto journey with me. The brownies store well in the fridge (although they would disappear in a day if I did that), so I freeze them individually after cooling and slicing. We always have double cream in the house, so Funnyman reheats them slightly and then pours a little cream over them. Happy Husband = Happy Wifey…

Funnyman wasn’t entirely convinced when I broached the subject of doing keto with me. He has a massive sweet tooth and the thought of giving up his after-dinner treats didn’t sit well with him. A client of mine in the US suggested I try Swerve® (a brand that makes confectioner’s / powdered Erythritol) as a sugar replacement in my cooking and baking and I have never looked back. After Funnyman watched the documentary MAGIC PILL in May 2018, he was amped to start. These lollies were actually the first thing I made him. Of course, I then had to become a lolly-making machine because he happily enjoys one of these most nights.

The first time I had padrón peppers was in Barafina in Soho, London. Funnyman and I were drowning our sorrows, I cannot recall exactly but I suspect it was something financial. The irony was that we sat in this restaurant for about 4 hours and ordered three-quarters of the tapas menu items throughout the evening, washed down with plenty of wine (life before keto). Whatever was bothering us that night was soon forgotten (along with our financial common sense) – but the padrón peppers were memorable. Eaten whole, this is a risky little appetiser as some are hot and some are not. They are simply the perfect appetiser for someone who likes to live on the edge and I was delighted when I saw they are now readily available at the supermarket. I have made this several times and never encountered a spicy one, so perhaps not that risky after all..?

Funnyman took me to Santorini in 2015 so that I could recover from unpleasant surgery. We spent 8 days in the sun, drinking beer and Ouzo and eating our body weight in seafood, lamb and salads – pretty much doing everything opposite to the surgeons advice. I couldn’t have cared less – we were in Greece, my life had changed forever and I felt sorry for myself.  Returning home, I realised that Greece ruined tomatoes for me. The tomatoes in Greece are simply the most fantastically-delicious balls of heaven you will ever come across – and any tomato you eat after visiting Greece will be a sore disappointment. Here in the UK, opt for organic, deep-red, on-the-vine, and ones that look over-ripe, and you might find something close. But if you want the best – go to Greece! (And please don’t store tomatoes in the fridge…)

I woke up particularly well this morning. Mr Higgins (one of our pooches) snuggled right up against me the entire night, and I woke up with his little nose breathing small amounts of snot onto my cheek: bliss. It certainly beats one Winter morning last year while still half asleep, in an effort to cover my shoulders with the duvet, my hand slipped and I punched myself in the face. Yeah, I would take a bit of Scottish Terrier snot any day. Off topic, apologies… Having been to Thailand twice in my travels, I think its fair to say how incredible and fresh the flavours are, and there is a strong Asian influence in this steak salad. It is also 100% keto, fast, simple and satisfying. If you like the idea of combining steak with Asian  flavours, you may also like my Low-carb Pho Bo.

Be sure to use a very sharp knife and work carefully when you slide away the fat. Sausage and Cauliflower Bake (Low carb)

This recipe doesn’t require a long-winded head note because it is so fabulous! It’s SO simple, SO tasty and I bet your kids will love it! This recipe yields 4 servings and would go well with a lovely, fresh green salad on the side. You could double the recipe to serve 8 (using the handy plug-in below) – and use a larger casserole, but please be sure to use Gruyere cheese, as I am not sure Cheddar or any other cheese would pack the same punch. It’s one of my favourites. (I used 97% Pork Sausages (Tesco Finest brand) for this recipe: With those, there is no added wheat/gluten. However, there is a small amount of potato starch present, but honestly I am fine with that for occasional consumption. It’s only 1.5g carbs per TWO fat, beautiful pork sausages!) I have made this dish so many times and it just keeps getting better. It’s not easy doing something remarkable with chicken breasts: they can be somewhat underwhelming and can easily dry out. These are juicy, moist and bursting with flavour. I love smoked paprika and rubbed the breasts with it before frying on both sides, then stuffing and finishing in the oven. The stuffing was simply two ingredients that when combined are simply out of this world (one being my Homemade Basil Pesto which you really must try). Enjoy this simple, mid-week meal of pesto-stuffed chicken breasts – it may become your new breast friend (… see what I did there?)

Poor kale has had a bad rep. It can be a little bitter when eaten raw, but once you try it crispy like I have shown below, it will convert you! Crunchy and partially charred, this is a fabulous side-dish. Carefully measure the olive oil that you add and coat it well using your hands in a large bowl ensuring each leaf is evenly coated. A sprinkling of Pink Himalayan Salt, grated Parmesan or finely grated lemon zest are all great ways to finish it – but I love it with salt. Happy crunching on this crunchy kale!
