Balsamic Roasted Asparagus

A quick and easy alternative technique to cooking up asparagus. I love the Buttered Asparagus with Parmesan recipe, but this is also a great way to add a bit of sweet acidity to this fabulous vegetable.   • 250 g large asparagus (weight prior to trimming)
  • 2 TB olive oil
  • 2 TB balsamic vinegar
  • 2 TB Parmesan cheese finely grated

  • 250 g large asparagus (weight prior to trimming)
  • 2 TB olive oil
  • 2 TB balsamic vinegar
  • 2 TB Parmesan cheese finely grated

Instructions
  1. Preheat the oven to 200°C / 390°F.
  2. Snap off the hard, woody ends of each asparagus

  3. Use a vegetable peeler to shave off and discard the bottom half of the asparagus peel.

  4. Your trimmed weight of the asparagus will be approximately 160g /5.8oz (and this is the weight the macros were calculated.)
  5. Spread the asparagus out on a baking sheet. Drizzle over the olive oil and balsamic vinegar. Scatter over half the finely grated Parmesan.

  6. Place in the oven for 10-12 minutes, removing the tray halfway through to baste the asparagus with the oil and vinegar, using a silicon pastry brush.

  7. Serve immediately, with the remaining Parmesan grated over.
