Beurre Noisette (Brown Butter)

Beurre Noisette Brown Butter Keto
Browned Butter

“Let’s take butter up a notch in flavour! Try this recipe at least once and I promise you will not regret it. Beurre noisette (brown butter) has a deep, rich, nutty flavour that remind me of caramel. A block or two of browned butter can be used to cook eggs, add to your baking, or melt over cooked vegetables, like I did on my Brown-buttered Brussels Sprouts. And more good news: since you are essentially removing the milk solids from the butter (when you strain it through the muslin / cheesecloth), so this browned butter is even lower in carbs than regular butter (in fact, its zero carbs). If you love it (and I know you will), make a larger batch next time.” – Monya

Keto Celeriac Dauphinoise

Keto Celeriac Dauphinoise

“I grew up in South Africa and a mandatory ‘potato bake’ was the highlight of any braai. After going keto in early 2018, not being able to tuck into one was the only thing that stung a little. Then I discovered how low in carbs celeriac was! So, I adapted the recipe I used to do for a potato bake, but used celeriac instead! UPDATE: I have taken this recipe off this blog because I worked hard to bring you a new-and-improved version that now features in my cookbook Keto Kitchen.” – Monya

“I was so excited to post this one! This pork belly with keto gravy is the perfect option for a lazy, Sunday afternoon roast. Or, if your Christmas party is small this year and you aren’t a turkey fan, try something different! This recipe will happily feed five people and features a sharp, herby red onion relish – an ideal acidic, sweet accompaniment. I enjoy this with my Keto Celeriac Dauphinoise.” – Monya

Keto Garlic Snails (Escargot)

Keto Garlic Snails Escargot

“How could I not feature garlic snails (escargot) on my blog? While many cringe at the thought of eating snails, they were one of my favourite things to order in a restaurant when I was very young. My mom also prepared them often on Saturday nights. Back in South Africa, we could purchase them from the supermarket, but here in England they aren’t so easily available. I need to order them online. I even got the retro snail dishes #NERD. I infused the butter with garlic to avoid the chewing on clumps of garlic, which is a nifty little process to know. That is an optional step. Be sure to mop the butter up with a slice or two of keto bread. I have plenty on the site in the Breads recipe section on this site.” – Monya

Quick and Easy Keto Pho Bo

Keto Pho Bo
Low carb Pho Bo

“Backpacking around Vietnam with Funnyman in 2010 was one of our best holidays ever! I recall having phở bo (pronounced “fuh” – not “foo” or “foh”) for the first time in Hanoi. I was blown away and happily slurped it down numerous times as we travelled north to south over several weeks. Now, many years later and hardcore into my very low-carb lifestyle, I wanted to relive those awesome memories. I created a quick 15-minute keto pho bo using the (konjac / shirataki) ‘noodles‘ to make it low-carb friendly. You could also use courgette noodles.” – Monya

Thai Prawn Curry with Cherry Tomatoes (Keto)

Keto Prawn Curry

“Fragrant, spicy, creamy… this Thai prawn curry was made using Thai yellow curry paste and coconut milk. I struggle to find Thai yellow curry paste in the stores here in the UK, so I buy it online. It’s authentic, delicious and affordable. I quickly cook the prawns before starting the curry, then add them back in later to warm through before serving. This prevents an unsightly grey soup and delays the sauce reducing. I learnt this from experience! The sauce is reduced until thick and creamy and then simply poured over konjac pasta. The plump prawns, sweet cherry tomatoes, salty fish sauce, spicy chilies, acidic lime and the fragrant coriander create perfect harmony. I also added a teaspoon of powdered erythritol to finish it off with some much-needed sweetness. Simply put – you need to eat this!” – Monya

“These crispy keto cheese nachos can be used to scoop up your favourite low carb dip, but I love them with my Guacamole. This recipe was based on using thinly rolled fathead dough where both sides are carefully crisped in the oven. Try this version, then play around changing up the cheese or herbs.” – Monya

“Just because you have given up flour doesn’t mean you can’t crumb food anymore! I simply combined blitzed pork crackling with nutritional yeast flakes and fried as normal. Leaner crackling is preferred for this recipe, so I used Mr Porky’s Crispy Pork Strips (a UK product).” – Monya

Smoked Paprika Chicken Chorizo Bake (Keto)

Smoked Paprika Chicken Chorizo Bake Keto
Keto Chicken and Chorizo Bake

“This is why you must try Cauliflower Rice! I added the cooked cauli-rice to the chicken roasting dish halfway through and it absorbs all that glorious smoked paprika flavour. This chicken and chorizo bake uses the Fats of Life Cauliflower Rice recipe, which you will notice only serves 4. You should therefore make 1 and 1/2 times to yield enough for 6 people (and this is also how the macros were calculated.)” – Monya

Cauliflower Rice (Keto)

Cauliflower Rice Keto

“This is a nifty way to mimic rice when you are serving a dish that needs sauces mopped up. I cooked down onions and garlic to add more flavour before adding and cooking the blitzed cauliflower. It’s high in fibre and filling. You can play around and pimp it using different freshly chopped herbs or flavoured oils, but this recipe below is a good ‘base’, so go wild. Be sure to also check out my Creamy Keto Cauliflower Mash.” – Monya

“This recipe is a fantastic example of how versatile my Keto Creamy Cauliflower Mash is! This is a simple, hearty and comforting fish pie and an ideal meal for the chilly evenings. I have seen many stores sell ready “fish pie” mixes (usually a mix of chopped white fish, salmon and smoked haddock) which is handy. However, I added prawns to my version to make it a wee bit fancier. This dish is just too lovely and I can’t wait for you to try it! Great with greens on the side, if desired.” – Monya

Creamy Cauliflower Mash (Keto)

Cauliflower Mash Keto

“Some may turn their nose up at mashing cauliflower to mimic The Great Potato, but you may just be converted. I didn’t just stop at using a potato masher, I added full-fat cream cheese and blitzed the mixture into a creamy puree. All it needed was a little seasoning and it’s perfect as a side dish. You could also use it like I did to top my Keto Seafood Bake and Spicy Keto Cottage Pie.” – Monya
