“Fragrant, spicy, creamy… this Thai prawn curry was made using Thai yellow curry paste and coconut milk. I struggle to find Thai yellow curry paste in the stores here in the UK, so I buy it online. It’s authentic, delicious and affordable. I quickly cook the prawns before starting the curry, then add them back in later to warm through before serving. This prevents an unsightly grey soup and delays the sauce reducing. I learnt this from experience! The sauce is reduced until thick and creamy and then simply poured over konjac pasta. The plump prawns, sweet cherry tomatoes, salty fish sauce, spicy chilies, acidic lime and the fragrant coriander create perfect harmony. I also added a teaspoon of powdered erythritol to finish it off with some much-needed sweetness. Simply put – you need to eat this!” – Monya

“This is a nifty way to mimic rice when you are serving a dish that needs sauces mopped up. I cooked down onions and garlic to add more flavour before adding and cooking the blitzed cauliflower. It’s high in fibre and filling. You can play around and pimp it using different freshly chopped herbs or flavoured oils, but this recipe below is a good ‘base’, so go wild. “I love this dish! I baked baby onions in a thyme-infused cream and topped with a crumb made from blitzed lean pork scratchings (a UK product) and finely grated Parmesan. When I made this dish for us, we ended up eating them on top of our grilled pork chops. Lush! The peeling of the onions is a finicky job, but the results are worth it in the end. Be sure to keep the little root end intact to ensure the onions keep their shape, but use a small, sharp paring knife to trim it close enough that the entire onion is edible. And don’t jab yourself like I did doing that … #BloodFest2018″ – Monya

“This recipe is a fantastic example of how versatile my Keto Creamy Cauliflower Mash is! This is a simple, hearty and comforting fish pie and an ideal meal for the chilly evenings. I have seen many stores sell ready “fish pie” mixes (usually a mix of chopped white fish, salmon and smoked haddock) which is handy. “Some may turn their nose up at mashing cauliflower to mimic The Great Potato, but you may just be converted. I didn’t just stop at using a potato masher, I added full-fat cream cheese and blitzed the mixture into a creamy puree. All it needed was a little seasoning and it’s perfect as a side dish. You could also use it like I did to top my Keto Seafood Bake and Spicy Keto Cottage Pie.” – Monya

“I want to start by saying I did not invent this ‘Cloud Bread’. I am sure there is a great story behind the concept, but I am ashamed to say I haven’t even researched what that story is – I simply wanted to give it a go myself and post my version of keto cloud bread. After a slightly failed first attempt (at trying other versions I saw online), I made it my mission to improve what I had seen drawing from my own experience in the kitchen. The recipe will make 6, but essentially this means 6 halves (in other words – 3 sandwiches / 3 burgers). If you want more, double the recipe and use a second tray when cooking. I must admit, it’s not my favourite ‘bread’ option, but worth a shot anyway as it may be yours. (Be sure to also check out the Breads section on this site for my other creations). The red onions are cooked down on a very low heat, and their sweetness balances the oozy Brie just perfectly. “When making little berry meringue baskets for guests, I always whip up sugar-free version for Funnyman and I. While ours aren’t snow-white like the store-bought versions my guests receive, they are still damn tasty. If you prefer to make a mess of this (I mean, to literally make a Berry Mess), simply use the Mini Meringues recipe and mix it all together just before serving… (as opposed to making a pretentious, deconstructed version like I have done here by piping them into baskets…)” – Monya
