Spicy Paprika Macadamia Nuts

Next to biltong and droewors, NUTS are probably the most popular go-to snack in our house. They just tick all the boxes as a perfect keto snack: high in fat, fibre and protein. We try and steer clear of the store-bought roasted nuts for several reasons: many mixed nuts packets (while convenient) usually include peanuts and almost always feature vegetable oil – two things which should be avoided on keto. However… in the spirit of being honest and transparent, I would be lying if I said we didn’t always have a packet kicking about. Anyway, honesty aside… during COVID-19 lock down, I found a packet of halved macadamia nuts in the pantry and got to work straight away when Funnyman said he was craving something spicy as a snack. These did not last long in our house – they were delicious!

Fried Mozzarella Bites (Keto)

Be prepared to see far more things coated in this lovely batter I developed! Wow, it’s gorgeous – and I am pleased as punch to share it here on Fats of Life. (Be sure to check out my Keto Battered Cod recipe too!) Regarding deep-frying… well, this can been a little challenging because we should steer clear of heating any oils (even olive oil) to frying temperatures. However, ghee works beautifully. Ghee is essentially a clarified butter and is relatively inexpensive. Since most of the milk solids are removed in a clarified butter, its a great option to deep-fry food in recipes like this. These are delicatelycrunchy-on-the-outside and gooey-on-the-inside, and simply put: mozzarella heaven! I advise you create them in small batches as they need to be eaten immediately. Enjoy!

Mixed Seed Crackers (Keto)

These fantastically crispy, mixed seed crackers can be used to scoop up your favourite dip or salsa. Follow the recipe below to yield 10 even-sized slices, because at only 2g carbs per serving (one serving = 2 large crackers), you can now do so completely guilt-free! Don’t omit the salt (as I did in my first trial) because its a necessary addition. Be sure to also cook both sides to achieve maximum crunch and colour. A batch of these lasted several days in a sealed Tupperware and I happily spread my Keto Chicken Liver Parfait on them. I have tried these using ground chia as well. They turn out equally good, but I prefer the flavour of ground flax.

Olive & Sun-dried Tomato Low-carb Bread

Olive and Sundried Tomato Bread
Olive and Sundried Tomato Bread

I am never running out of ideas to mimic a loaf of the good stuff. Each slice of this bread – made using almond flour and psyllium husk powder – comes in at 7g carbs (one slice is approx. 60g / 2.1oz). A bit of a hefty price to pay for such a small slice, but a great recipe to try anyway on your low-carb journey. Use the best quality, strongest-tasting black olives you can find and don’t omit the sun-dried tomatoes – they add a lovely sharpness with every bite. Serve a slice of this olive & sun-dried tomato low-carb bread with a thick layer of grass-fed butter and a crack of pink Himalayan salt. Be sure to also check the other Keto Breads I have on the website..

If you want to make it a more substantial meal, add some good-quality prosciutto after baking – see pic at the end).

Best-ever Roasted Macadamia Nuts (Keto)

Keto Roasted Macadamia Snacks

Just look at those macros – these are the ULTIMATE fat snacks! Macadamias are my favourite nut: they are high in fat and mind-blowingly rich in flavour when roasted. If you can spend 15 minutes once or twice a week to prepare a batch of these, you will have plenty of servings of these super-tasty, satisfying fat snacks. After roasting them, I scattered over a pinch of salt and Swerve® as soon as they came out of the oven, then allowed them to cool completely before storing in a sealed container. The macros are calculated on a portion size of 35g / 1.2oz roasted macadamia nuts – which is ample for a quick snack to get those fat macros higher, or satisfy your desire to crunch on something delicious between meals. They smell like popcorn and taste like heaven!

Cheesy, crispy keto nachos that can be used to scoop up a generous serving of Guacamole! Try this fool-proof version, then play around changing up the cheese or herbs I used…

Keto Onion Rings

Keto Onion Rings

Just because you have given up flour doesn’t mean you can’t crumb-and-fry food anymore! I simply combined blitzed lean pork crackling with nutritional yeast flakes and fried as normal. Absolutely incredible flavours and perfect to have on the side of your bunless burger. Leaner crackling is preferred for this recipe, so I used Mr Porky’s Crispy Pork Strips (a UK product) which I have seen available at Tesco and Sainsbury’s here in the UK. If you like the idea of crumbing-and-frying this way, check out the Keto Jalapeno Poppers recipe.

South African Homemade Biltong.. the way to my heart

South African Biltong

In case it hasn’t been clear (with all my talk of braaing!), I am living in the UK now, but I was born and raised in sunny South Africa. Those that know me will note that this post is way overdue – BILTONG: The way to my heart since I first chewed on it while teething as a baby (how teething is dealt with in South Africa) and my favourite keto snack ever! There are numerous stores around the UK that sell excellent biltong, but nothing beats the satisfaction of making your own homemade biltong.

You could probably fashion your own biltong maker (box, light, fan) but my trusty one (available only in UK) has never let me down. It gets used a lot and has a permanent spot on my kitchen counter. Regarding the spices, go ahead and try several or make your own, but Freddy Hirsch has perfected it! Step-by-step pics below.

Spicy Rosemary Roasted Nuts (Keto)

Keto Spicy Rosemary Nuts
Keto Spicy Rosemary Nuts

Nuts are an ideal keto snack as they are high in fat and fibre. However, the amount you snack on should be monitored. Peanuts are not permitted on keto, but there are plenty of other tasty options. These roasted nuts are moreish with a lovely hint of rosemary and heat from the cayenne pepper which you can adjust according to your preference. I scatter over a very small pinch of sweetener as soon as it comes out of the oven, but this is entirely optional. Since you are roasting and seasoning the nuts yourself, please purchase unroasted, unsalted whole nuts for this recipe. If you like this recipe, you will LOVE the Roasted Macadamia Nuts (my personal favourite).

Charred Padrón Peppers (Keto)

Keto Padron Peppers
Keto Padron Peppers

The first time I had padrón peppers was in Barafina in Soho, London. Funnyman and I were drowning our sorrows, I cannot recall exactly but I suspect it was something financial. The irony was that we sat in this restaurant for about 4 hours and ordered three-quarters of the tapas menu items throughout the evening, washed down with plenty of wine (life before keto). Whatever was bothering us that night was soon forgotten (along with our financial common sense) – but the padrón peppers were memorable. Eaten whole, this is a risky little appetiser as some are hot and some are not. They are simply the perfect appetiser for someone who likes to live on the edge and I was delighted when I saw they are now readily available at the supermarket. I have made this several times and never encountered a spicy one, so perhaps not that risky after all..?

Homemade Pork Scratchings (Keto)

Homemade Pork Scratchings
Homemade Pork Scratchings

We just love our butcher here in Berkshire … He hooked me up with some pork skin, so I did the obvious thing … I made pork scratchings. Be sure to use a very sharp knife and work carefully when you slide away the fat. The macros are tricky to calculate, since everyone removes different amounts of fat, but the carbs remain zero whichever way you like your porkies…
