After 3.5 – 4 hours, I was pleasantly surprised! While I was only left with 25g (0.9oz) – after it lost all its water content – it made a decent enough batch. These are best enjoyed soon after making, but you could pop a little bag of silica gel sachets into a container to stay as crisp as possible. Salt & Pepper Celeriac Crisps

This is a great way to use up leftover celeriac! Simply use a vegetable peeler to create shavings of celeriac then leave in your Ninja for several hours to dry out and crisp up!

Ingredients

  • 200 g (7 oz) celeriac shavings
  • salt and freshly ground black pepper

Instructions

  • Once your celeriac is peeled and wiped clean, use the same good-quality vegetable peeler to shave off pieces of the celeriac. They will be very thin shavings.
  • Scatter over just a little salt and freshly ground black pepper, tossing well to combine. Do not add too much salt, your 200g (7oz) shavings will dehydrate to a mere 25g (0.9oz) - which will concentrate the salty flavours.
  • Place into the basket of your Ninja and make sure the pieces are separate as much as possible. By that I mean try not to let pieces stick together too much.
  • On the dehydrator setting at 80°C (176°F), leave the celeriac in there for 2 hours. Check on them every now and then to pull pieces apart or shake the basket. You will notice they may have curled up and turned a little golden, but they are far from dried yet.
  • After 2 hours, reduce the dehydrator setting to 40°C (104°F) and leave them in there for another 90 min - 2 hours. They will be ready once they are completely dry and crunchy.
    They are best served soon after making, but you can store any leftovers in an airtight container. I always pop a little sachet of silica gel into goods I like to stay crisp.
