“I love these celeriac steaks with salsa verde! Celeriac has an unusually beautiful flavour and one of the few ‘root’ vegetables that are low enough in carbs to enjoy on the keto diet. You can run a search on the site for all my celeriac recipes, which may come in useful here, as I only use 2 rounds from a celeriac, leaving you with plenty leftover. You will need to find creative ways to use it up! There is an accompanying salsa verde sauce here which will yield a little more than you will need, but leftovers can be stored in the fridge and stirred through other dishes.” – Monya

“I used my vegetable peeler to ‘shave’ 200g (7oz) of thin celeriac flesh to make celeriac crisps! This was just enough to season and pop into my Air Fryer (on the dehydrate setting). After 3.5 – 4 hours, I was pleasantly surprised! While I was only left with 25g (0.9oz) – after it lost all its water content – it made a decent enough batch. These are best enjoyed soon after making, but you could pop a little bag of silica gel sachets into a container to stay as crisp as possible. These crisps will serve 4 as a little crunchy snack.” – Monya

“I have been meaning to share my celeriac chip recipe for a while now. However, I wanted to give it some more ‘kick’ in terms of spicy flavour. Here, I partially cook my celeriac batons in boiling water, then allow them to drain off. My fat (I used lard) is infused with garlic powder and paprika. I then scatter over Parmesan in the last 5 minutes after letting them finish in the oven. This recipe is suitable for 4 as a side dish, but you can adjust the recipe if you wish to make a smaller or larger batch.” – Monya
