“Punchy in flavour with a creamy sauce to match, these indulgent meatballs are so low in carbs, I advise you whip up a cauliflower mash or cauli-rice to enjoy them over. As you will notice, I do not need breadcrumbs (and I don’t even need eggs) to bind my meatballs. I simply ensure I use a high fat beef mince and cold hands to form compact balls. The latter scenario is often my favourite because I enjoy experimenting. These playful, more relaxed nights often results in delicious and interesting creations! This recipe is an example of one of those nights. I had a half-jar of char-grilled roasted peppers (red bell peppers / capsicum) in the fridge and roast chicken from the night before. I found some Ras el Hanout in the pantry which I had been meaning to play around with some more. This creamy, fragrant and dead-easy chicken ‘sauce’ can be served over your favourite ‘base’, like cauliflower rice, courgetti or shirataki (konjac) ‘fettucine’.” – Monya

“In case you didn’t already know, ‘Boerewors’ is a beloved South African sausage that boasts a very unique flavour. I have a Boerewors recipe on this site if you are up for the challenge of making your own sausages. However, if you aren’t, but still long for the flavour, I have made an easy version for you to sample. This was easy, I simply took the flavours present in boerewors and used them in meatballs! And, to keep things slightly authentic, the tomato sauce very loosely mimics a ‘smoor’. Smoor is a traditional lightly-spiced tomato sauce that often accompanies our beloved ‘Boerie Rolls’. “This was an accidental creation of mine which I then had to recreate for this blog! Dynamite flavours come from the turmeric cream sauce which bake away in cooked spinach and pork sausages. I labelled this low carb and not keto as many sausages aren’t entirely keto-friendly. They often contain potato starch, gluten and several other things we try and steer clear from. However, I would be lying if I said I don’t indulge in delicious porkies once in a while – but when I do, I always opt for Tesco’s Finest Sausages which are 97% pork and come in at only 1.5g per two sausages: not bad. “This is a simple and tasty way to prepare ribs if you are steering clear of store-bought marinades which often contain sugar. A spice mix is rubbed onto the meat before it’s very tightly wrapped in foil. I then slow cook the parcels to perfection. I finish it off with a good quality drizzle of olive oil and salt flakes. This may seem like a rich meal for two, so stretch it to four as a side dish. Then, halve the macros accordingly. “Oh my… the flavours in this bacon and tomato keto gnocchi! I used smoked bacon lardons because they are chunkier (and fattier) than simply dicing up thin bacon rashers yourself. They also render so much glorious fat and flavour when frying up, and this is key to this dish. The tomatoes add lovely sweet acidity. If you can manage 9.9g carbs per serving, this will sufficiently feed 2 people. But it is very rich and filling, so you could divide this into 4 smaller servings and halve the macros accordingly. “This is a basic, undressed ‘gnocchi’ recipe loosely based on the fathead dough concept. It looks a little rustic, but it does the job! It will need to be served with a sauce and some great ideas include Smoked Bacon & Tomato or Spinach and Pesto. “I love vegetables and never run out of ways to create interesting side dishes to enjoy alongside our meat or fish. Cauliflower is one of my favourite. Here, I simply cooked two ‘steaks’ (intact pieces cut from the centre of a large head) and made a quick, tasty butter using smoked paprika. Smoked paprika has an intense and important flavour and quite different to regular paprika, so please try and source it.
