Backpacking around Vietnam with Funnyman in 2010 was one of our best holidays ever! I recall having pho bo (pronounced “fuh” – not “foo” or “foh”) for the first time in Hanoi – and I was blown away! I happily slurped it down numerous times as we travelled from north-to-south over those 3 weeks! Now, many years later and hardcore into my low-carb lifestyle, I wanted to relive those awesome memories. I created a quick 15-minute low carb pho bo using the (konjac / shirataki) ‘noodles‘ from the UK company Eat Water’s range to make it low-carb friendly. I LOVE THIS.
This is why you must try my Cauliflower Rice recipe! I added the cooked cauli-rice to the chicken roasting dish halfway through and it absorbs all that glorious smoked paprika flavour. This is chicken & chorizo bake is a great family dinner that can be enjoyed with a fresh side salad. This chicken and chorizo bake uses the Fats of Life Cauliflower Rice recipe, which you will notice only serves 4. You should therefore make 1 and 1/2 times that cauli-rice recipe to yield enough for 6 people (and this is also how the macros were calculated.)
This recipe is a fantastic example of how versatile my Keto Creamy Cauliflower Mash is! This is a simple, hearty and comforting fish pie (coming in at 6.2g carbs per serving) and an ideal meal for the chilly evenings here in the UK. I have seen many stores sell ready “fish pie” mixes (usually a mix of chopped white fish, chopped salmon and chopped smoked haddock) which is handy, but I added prawns to my version to make it a wee bit fancier. This dish is just too lovely and I can’t wait for you to try it! Great with greens on the side, if desired.
Funnyman enjoys my Cauliflower Pizza and Fathead Pizza, but sometime around summer 2018 I stumbled upon a UK company called Lo-Dough® that launched a new product. Their ‘bread’ pieces (look like wraps) can be used as wraps or quick pizza bases. At 2.2g carbs per piece and high in fibre, I thought they were a good buy. I encourage you to give them a try and let me know what you think. They are pricey so I advise placing a small order at first to see if they are for you.
This is a fantastically spicy Moroccan seafood dish that can (mostly) be prepared the day before. When ready to eat, you will need only 10-15 minutes in the kitchen to reheat and finish the cooking – giving you plenty more time to spend with your guests. If you happen to have visited Morocco and returned with the mandatory keepsake tagine, now is your time to whip it out and use it to serve the dish. The dish is spicy, so adjust the minced chili to your liking.
While I simply love meat, a lot of my attention is focussed on the accompanying side dishes. Think further than frozen broccoli (gag!), because there are a multitude of things you could do with salads or cooked fresh vegetables making them interesting and fun. I love big, bold flavours that slap me right through the face. Craving pasta happens to all of us, but thanks to Eat Water’s ‘fettuccine’, I can make a creamy sauce and enjoy it with their konjac (shirataki) fettuccine, making a great keto pasta dinner. A few nights ago, I used everything I had in the fridge to make this deeply-satisfying dinner.
Bless his socks, this is what Funnyman makes me when I need a night off from cooking and he isn’t treating me with his Lamb Ribs (…that man loves his black pepper!) He has perfected it over the years and has implemented little tricks that I shared with him (like the importance of a meat thermometer probe), so I simply love it! There isn’t much to it, its chicken thighs covered in (it’s body weight of) freshly ground black pepper prior to cooking. A quick fry on the skin-side down to speed up the crisping of the fat, then it’s finished in the oven, skin-side up. The accompanying sauce is a mix of mayo and Sriracha and I have included it in the macros because that’s how we enjoy it. If you prefer a ‘stricter / cleaner’ keto dip, simply stir homemade chili paste into your homemade mayo.
Inspiration for this courgette and brie soup recipe came from my darling friend, Little Debbie Bryson who makes something similar at her sop-en-dop* birthday party every winter in Cape Town. Since moving to UK, I have sadly missed so many of them. This is for you LDB, I know it doesn’t compare to yours – but I slurped my version up with a longing lump in my throat. The recipe makes two hearty bowls, filling enough as a main meal, but you could make it stretch to 4 servings and enjoy it as a late-afternoon light meal (cup-of-soup) and halve the macros accordingly..
I know I am coming late to the concept of a cauliflower-crust pizza, but its because I wanted to try it myself and develop a recipe that I know is tasty and that works! Follow my version below and your gut will thank you: it’s not only high in fibre, but with the addition of tasty, low carb toppings, you could fool yourself and your family that you are having The Real Thing. (1 pizza = 2 servings, and it comes in at 11g carbs per serving (including toppings). If you aren’t convinced, do try out my Fathead Pizza Base, which is just as delicious!
I have made this dish so many times and it just keeps getting better. It’s not easy doing something remarkable with chicken breasts: they can be somewhat underwhelming and can easily dry out. These are juicy, moist and bursting with flavour. I love smoked paprika and rubbed the breasts with it before frying on both sides, then stuffing and finishing in the oven. The stuffing was simply two ingredients that when combined are simply out of this world (one being my Homemade Basil Pesto which you really must try). Enjoy this simple, mid-week meal of pesto-stuffed chicken breasts – it may become your new breast friend (… see what I did there?)
This recipe doesn’t require a long-winded head note because it is so fabulous! It’s SO simple, SO tasty and I bet your kids will love it! This recipe yields 3 servings and would go well with a lovely, fresh green salad on the side. You could double the recipe to serve 6 (using the handy plug-in below) – and use a larger casserole, but please be sure to use Gruyere cheese, as I am not sure Cheddar or any other cheese would pack the same punch. It’s one of my favourites..
