“Welcome to my rustic keto chocolate truffles! I know what you are thinking, they look like a small antelope took a dump on my marble surface! LOL… but many things ‘made with love’ are often imperfect! Anyway, I wanted to create little truffles and while mine aren’t as perfectly round as the store-bought kind, they are delicious… and INTERESTING (not only to look at!). I made a double batch of ganache and flavoured one batch with peppermint extract, and to the second ganache I added a generous pinch of dried chilli flakes! Both are very tasty – and a fun thing to put out at the end of a dinner party. Macros are calculated per small truffle and exclude the flavourings. From my batch, I made 36 little truffles in total. They keep well in the fridge in a sealed container.” – Monya

I am working on a fabulous coffee mousse, but in the meantime I wanted to share my keto lemon mousse recipe here. I added yellow food colouring, but I don’t think this mousse needs it. “I love to give myself a challenge, so here I tried to make my own pasta using glucomannan (konjac) powder. I am very pleased with the result of my little invention. And, while they look a little, er… rustic, the texture is a lot like pasta!. I used some yeast to add a little flavour, but – like any pasta – it needs a lovely sauce, so GET CREATIVE! We had it with a creamy bacon and garlic sauce, as pictured. However, the macros here are based on an undressed pasta for two. Alternatively, you could serve this between 4 people as a side option and halve those macros!. ” – Monya

More importantly, I didn’t know what else to call this creation! This blog is where I play, and if an experiment is good enough to share, then why not? You may even come up with ideas on how it can be improved! This is a basic, undressed keto spaetzle – so its up to you to get creative on what you want to serve it with. I think its lovely as a side option for 4 people, or possibly 2 if your macros allow for it.
