I also season it with sea salt flakes which add little perfect bursts of flavour and crunch. “South Africa nails it when it comes to offering keto snacks. I could write a thousand words on how much I love biltong and droewors! If you have never tried either, please do so. (And, ‘jerky’ is not the same thing). I often make my own biltong, but was inspired by a friend who used my ‘Boerewors‘ mix to create droe wors (South African dried sausage) in a biltong maker. I then did the same (not using the pork) and LOVED the result! Not only is my version clean, but there is something special about using a cool gadget (in this case, a sausage stuffer) and making your own snacks. I went on to drizzle mine in a criss-cross fashion – and we enjoy them over Easter every year. “Its not quite spring yet (despite what the blooming beautiful daffodils say), so here is a lovely idea to slow cook on a lazy Sunday. I served our lamb shanks over Creamy Cauliflower Mash, but I have not included the mash in the macros as you may have your own yummy side dish to mop up the lovely herby tomato sauce. (PS – here is a Cheesy Celeriac Mash you might also like). While two shanks could feed 4 people, I couldn’t possibly share my lamb with anyone, so this recipe is based on serving two. If 11g carbs per serving (which includes the sauce) seems a little hefty to you, simply stretch this recipe to serve 4 and halve the macros accordingly, OR… tuck into your shank and use the sauce a bit more sparingly. “I made my own BOEREWORS (South African sausage), so I had to showcase my efforts here. I love a challenge (and I love gadgets), so I ordered a sausage maker online, as well as sausage casings. Believe it or not (never having done this before), it took me less than an hour from the moment I opened the box, assembled the device – to me twisting the sausages into 6 portions. And, that included making the seasoning of the mince mixture! The predominant flavour in boerewors is the all-important crushed coriander seeds with just a hint of allspice. I served this with another SA favourite: smoor (a lightly spiced tomato relish). “Goodness me, I love this dish! I was home alone when I whipped it up and enjoyed it for several days after. I simply cooked the soft inner leaves of Savoy cabbage (although any white cabbage will do), then baked it in seasoned double cream. To finish, I couldn’t resist a few teeny tiny drops of truffle-infused olive oil to finish. Luxurious and heavenly! This recipe will serve 5 people as a side dish (or 4-6 – some may find it rich, others may tuck in for more because its so indulgent). I therefore stuck to calculating the macros on a 100g (3.5oz) serving, which is pretty generous for such a rich side dish.
