This version of mine is literally an “all-in-a-very-large-pan-at-the-same-time” kind of ratatouille, so it could not be easier! Packed with flavour and featuring varying textures, this recipe can serve 4 (as a side dish), but if the macros seem a bit high, it could easily be stretched to 6.
