Spicy Cajun Chicken and Cauliflower Tray Bake (Keto)

Spicy Cajun Chicken and Cauliflower Tray Bake Keto

“I have been wanting to make my own Cajun spice mix for a while now because I read the label of my store-bought bottle and noticed sugar present. In the interest of keeping the rest of this dish super-simple, I simply scatter it over cauliflower and chicken drumsticks before baking. If three drumsticks per person seems too much for your daily protein, just keep the extra for lunch the next day. The lime and sour cream sauce is a lovely, soothing drizzle over the dish, so don’t skip it! This is perfect with a scattering of finely chopped coriander (cilantro). Enjoy!” – Monya

Keto Lemon Meringue Pie

Keto Lemon Meringue Pie

“There were several dud keto lemon meringue pies here in casa de Palmer before I got this version just perfect! Zingy and refreshing, this is the perfect low carb dessert to serve at your next BBQ. Please pay attention to my tips in the method. They are all there for a reason, inspired mostly from my own failures. You will notice I add desiccated coconut to the base, and that is because back in South Africa we would make a lemon meringue tart base using crushed “Tennis Biscuits”. These are delicious store-bought biscuits that have a subtle, yet lovely coconut flavour.” – Monya

Baked Lemon Cookies (Keto)

Baked Lemon Cookies Keto

“These baked lemon cookies uses coconut flour in place of almond flour, yielding a slightly different, more dense texture than one might expect. They call for some of my Keto Lemon Curd and are packed with so much delicious zinginess. I go further and add finely grated lemon zest. The eggs and cocoa butter holds the whole lot together (so be sure to slice only once cooled). I also threw in some ground chia for additional fibre. Simple and yum!” – Monya

Keto Lemon Curd

Keto Lemon Curd

“This sharp, sweet and tart keto lemon curd has myriad uses. Funnyman loves a spoonful folded through plain yogurt. Remember, we aren’t working with familiar ingredients here. I found that my ratios of elements used (pretty standard for a curd) solidifies in the fridge and I suspect its the erythritol. Fear not, it can easily be brought to a lovely texture by staying at room temperature for a bit. A good stir is always helpful. As with most things, it is best enjoyed soon after making.” – Monya

Celeriac ‘Steaks’ with Salsa Verde (Keto)

Celeriac Steaks with Salsa Verde Keto

“I love these celeriac steaks with salsa verde! Celeriac has an unusually beautiful flavour and one of the few ‘root’ vegetables that are low enough in carbs to enjoy on the keto diet. You can run a search on the site for all my celeriac recipes, which may come in useful here, as I only use 2 rounds from a celeriac, leaving you with plenty leftover. You will need to find creative ways to use it up! There is an accompanying salsa verde sauce here which will yield a little more than you will need, but leftovers can be stored in the fridge and stirred through other dishes.” – Monya

Salt and Pepper Celeriac Crisps (Keto)

Salt and Pepper Celeriac Crisps Keto

“I used my vegetable peeler to ‘shave’ 200g (7oz) of thin celeriac flesh to make celeriac crisps! This was just enough to season and pop into my Air Fryer (on the dehydrate setting). After 3.5 – 4 hours, I was pleasantly surprised! While I was only left with 25g (0.9oz) – after it lost all its water content – it made a decent enough batch. These are best enjoyed soon after making, but you could pop a little bag of silica gel sachets into a container to stay as crisp as possible. These crisps will serve 4 as a little crunchy snack.” – Monya

Broccolini with Sesame Dressing (Keto)

Broccolini with Sesame Dressing Keto

“I love broccoli, but I especially love ‘broccolini’ (Tenderstem) which makes for a more attractive presentation. This broccolini with sesame dressing is a delicious side veg option. It is simply cooked broccolini smothered in a quick and easy dressing boasting the intoxicating flavour of toasted sesame oil and a little tamari (gluten-free soy sauce).” – Monya

Slow-cooked Lamb with Rosemary Cauliflower Mash (Keto)

Slow-cooked Lamb with Rosemary Cauliflower Mash Keto

“This slow cooked lamb with rosemary cauliflower mash is a beautiful meal that features that tastiest garnishes! It is rich and filling, so I advise it is served between 3 people, and not 2. Truthfully, some effort is required, but many things can be done at the same time. You will also learn to make a keto ‘gravy’ while you are at it! Macros are calculated assuming you are serving 3. If you find yourself scoffing the whole lot between two people, bear in mind the carbs will increase to 13g per serving.” – Monya

Coconut Cream Pie (Dairy free Keto)

Coconut Cream Pie Dairy free Keto

“This dairy-free dessert was created for those readers with dairy intolerance. To maximise the lovely coconutty flavour, I use coconut oil, coconut flour, coconut milk and desiccated coconut. I reduce the coconut milk over high heat to intensify the flavour and evaporate most of the moisture. This results in a thick, creamier mixture. Don’t skip the lime zest garnish – its a lovely touch. ” – Monya

Steak with Green Peppercorn Sauce (Keto)

Steak with Green Peppercorn Sauce Keto

“This steak with green peppercorn sauce is Funnyman’s favourite way to enjoy steak. I got hold of a jar of green peppercorns in brine and got to work! This whopper is high in calories, but for a quality meal, I think you can forget about counting calories. Enjoy this peppery beast with something simple on the side like buttered broccoli.” – Monya

Curry Prawn Salad (Keto)

Curry Prawn Salad Keto

“What a deliciously interesting salad! I added curry powder and a squeeze of lime juice to regular mayonnaise and mixed in cooked prawns. Served over a simple bed of salad leaves, this filling meal needs nothing else other than chopped coriander and some seasoning. Simple and yummy!” – Monya

Crustless Quiche Lorraine (Keto)

Crustless Quiche Lorraine Keto

“This deliciously decadent crustless quiche features smoked bacon lardons in a lightly cheese-flavoured set savoury ‘custard’. It can be sliced into 8 slices, but the macros per slice are so low – you may as well have 2 slices with a lovely acidic salad on the side to cut through all the rich flavours! TIP: I always place my quiche on a tray as it just makes for easier rotating and removing. Don’t forget the all-important good-quality set of oven gloves!” – Monya

Keto Lemon Mousse

Keto Lemon Mousse

“I love mousse the texture and the mouthfeel of mousse. Regarding sweet keto treats (which are more Funnyman’s thing than mine), I will likely only indulge if its coffee-flavoured or features a very zingy and acidic element. I am working on a fabulous coffee mousse, but in the meantime I wanted to share my keto lemon mousse recipe here. I added yellow food colouring, but I don’t think this mousse needs it. The flavour of colouring (while subtle) is very evident to me and I prefer the fresh flavours of this refreshing mousse without it.” – Monya

Homemade Keto ‘Pasta’!

Homemade Keto Pasta

“I love to give myself a challenge, so here I tried to make my own pasta using glucomannan (konjac) powder. I am very pleased with the result of my little invention. And, while they look a little, er… rustic, the texture is a lot like pasta!. I used some yeast to add a little flavour, but – like any pasta – it needs a lovely sauce, so GET CREATIVE! We had it with a creamy bacon and garlic sauce, as pictured. However, the macros here are based on an undressed pasta for two. Alternatively, you could serve this between 4 people as a side option and halve those macros!. ” – Monya
