Here, I cook the cauliflower florets until tender yet firm – this maintains some texture. Buttery magic is then created when the butter is allowed to slowly brown. The nutty aroma is further enhanced with the delicious flavour of garlic. You can serve this simple, nutritious dish as a side option to any meat, chicken or fish.
This dish provides a satisfying alternative to traditional starch-heavy side dishes. Additionally, it complements a variety of main courses, from grilled meats to roasted chicken.

Cauliflower in Garlic Browned Butter
Per serving
Ingredients
- 300 g (10.6 oz) cauliflower florets
- 60 g (2.1 oz) unsalted butter
- 2 large cloves garlic
- salt and ground white pepper
- sea salt flakes
- freshly ground black pepper
- small handful finely chopped parsley, (optional garnish)
Instructions
- Trim the cauliflower into even-sized smaller florets while you bring a pan of salted water to the boil.
- Add the cauliflower and boil until tender. Drain well in a colander and allow to steam off. Season with salt and ground white pepper.

- In the meantime, melt the butter in a small pan over moderate heat. You will notice little 'white spots'. These are the milk solids separating.

- Roughly chop the garlic cloves. There is no need to peel them, we strain the butter anyway. Add the garlic to the pan of butter.

- Leave the butter on the heat until you start to smell a luxuriously nutty smell (the milk solids are browning) and the garlic starts turning golden. Do not allow the garlic to burn, so as soon as you start to see the garlic take on a darker colour, strain the butter through a sieve lined with food-grade muslin or cheesecloth. The butter will be quite dark, as shown.

- Simply pour this strained (DELICIOUS) garlic-infused brown butter over your cooked cauliflower and season with salt flakes and freshly ground black pepper.

- Serve immediately (scattered with chopped parsley, if using). Yum!
