“Everyone is making halloumi ‘fries’. Many pubs even offer them to those living low carb, which is great. I wanted to try it for myself, but since I never heat any oils to high-frying temperatures, I decided to fry my squeaky pieces in browned butter instead. Brown butter is just regular butter that is heated for a while. The magic happens once the butter stops sizzling and foaming, and the milk solids start browning. This process adds massive flavour to the butter. Once strained from the burnt milk solids, the result is a browned butter that adds a delicious, nutty flavour, It is indescribable! I did this to make my super delicious little halloumi fingers. Dip them in some reduced-sugar ketchup for a quick snack or tapas idea. “This is a very simple fish dinner that requires only a little effort. Skinless cod fillets are very gently baked in the oven while butter is browned and infused with garlic on the stove top. After straining, I warm the butter through with little capers (which add great bursts of salty flavour) then pour it over the fish along with a generous squeeze of lemon. The night we enjoyed this, we had it with Fresh Tomato and Garlic relish which was an excellent accompaniment and highly recommended. “Let’s take butter up a notch in flavour! Try this recipe at least once and I promise you will not regret it. Beurre noisette (brown butter) has a deep, rich, nutty flavour that remind me of caramel. A block or two of browned butter can be used to cook eggs, add to your baking, or melt over cooked vegetables, like I did on my Brown-buttered Brussels Sprouts. And more good news: since you are essentially removing the milk solids from the butter (when you strain it through the muslin / cheesecloth), so this browned butter is even lower in carbs than regular butter (in fact, its zero carbs).
