Spicy Celeriac Roasties (Keto)

I have made delicious recipes using low carb celeriac in the past. (Check them out: Dauphinose, Mash & Chips)… but I wanted to play around some more with this delicious low carb vegetable. So, here I cut my celeriac into large chunks and flavoured the basting lard with an interesting combination of spices. Due to the nature of celeriac, they are unlikely to “crisp” up as much as a potato would, but its still a winner! Enjoy!

Creamy Cauliflower Rice (Keto)

Like most of you, I have made cauliflower rice, cauliflower mash and cauliflower couscous (just run a search on this site if you want to see those recipes). I love them all and make all three regularly. Here, I wanted to play around with the flavours of the mash I make, but include a little texture. So I pretty much used the best cooking methods to achieve exactly that – and now this version is my favourite! I had no idea what to title it, but “creamy cauliflower rice” seemed to be the most accurate description. Enjoy!

BBQ Onion Skewers with Chilli Butter (Keto)

Our South African roots will be evident in the inspiration behind this dish. Firstly, you should know that Funnyman and I LOVE to braai (BBQ). We don’t use charcoal (shudder) and we don’t use gas (even bigger shudder) – we actually import our wood from South Africa via a fabulous company here in the UK that provides us with kameeldoring wood which is excellent. You see, South Africans don’t braai just to eat. We spend hours watching the logs burn down to coals while we chat with loved ones. And then, after everyone has eaten, we throw more wood on the fire and just watch the flames as we contemplate life! As you can imagine, coal and gas BBQs just won’t cut it for us.

Vegetable Gruyere Bake (Keto)

We always (and I mean ALWAYS) have broccoli, cauliflower and double cream in the house. I have played around with so many different ways to use those delicious vegetables and have made many different high fat cheesy bakes too. They are all equally delicious – we don’t even have a favourite. (Check out the SIDE DISHES category on this site to see them all.) Anyway, with this one, I wanted the beautiful, unique flavour Gruyere cheese to feature because I love flavour that slaps me through the face. I also added just a pinch of ground paprika to give a slightly different flavour dimension. Whip this out at your next Sunday roast – your family will love the rich decadence! Brussels Sprouts in Bacon Butter (Keto)

This is a decadent and rich side vegetable option which can be enjoyed any time of the year. I sliced up the Brussels sprouts to ensure even cooking and a lovely texture, and smothered the whole lot in a very buttery bacon mixture. It needed only a little seasoning. Not too bad for only 20 minutes…

Cream-baked Cabbage with Truffle (Keto)

Goodness me, I love this dish! I was home alone when I whipped it up and enjoyed it for several days after. I simply cooked the softer inner leaves of Savoy cabbage (although any white cabbage will do), then baked it in seasoned double cream. To finish, I couldn’t resist a few teeny tiny drops of truffle-infused olive oil to finish. Luxurious and heavenly! This recipe will suitably serve 5 people as a side dish (… or 4, or 6 – some may find it rich, others may tuck in for more because its so indulgent). I therefore stuck to calculating the macros on a 100g (3.5oz) serving, which is pretty generous for such a rich side dish. Given the lovely flavour of the truffle, serve this alongside a simple steak or chicken so there are no competing flavours. THIS RECIPE IS ACCOMPANIED WITH A VIDEO. Cheesy Celeriac Mash (Keto)

My Celeriac Dauphinoise is currently the most visited recipe on the blog so I wanted to try this low carb root vegetable in other ways. Mashed in the same way I do my creamy Cauliflower-mash recipe, this beautiful side dish is extra special because it boasts a unique flavour in addition to a beautifully creamy mouthfeel: simply perfect to mop up all those lovely keto sauces. It’s coming close to Christmas, so be sure to check out some keto-friendly ideas here that you could create for your spread and use some of the Side Veg ideas to complement your dinner. More importantly: remember that there may be “traditions”, but there are no “rules” >>>>  Do whatever you want to at Christmas! (I grew up in South Africa and we had a BBQ – pardon me, a BRAAI – every year on Christmas Day and our ‘dessert’ was a juicy watermelon that would float in the pool while us kids swam around it.) JUST ENJOY THE TIME WITH YOUR LOVED ONES and forget about how “perfect” your turkey should be! :)

Cauliflower Steaks with Smoked Paprika Butter (Keto)

I love vegetables and never run out of ways to create interesting side dishes to enjoy alongside our meat or fish. Cauliflower is one of my favourite. Here, I simply cooked two ‘steaks’ (intact pieces cut from the centre of a large head) and made a quick, tasty butter using smoked paprika. (Smoked paprika has an intense and important flavour and much better than regular paprika, so I encourage you to make the effort to source it). Scatter over some strong Gouda cheese and allow the whole lot to melt before tucking in. Lush! Be sure to check out all the Side Dish ideas on the site.

Coconut-roasted Cauliflower (Keto)

Keto Coconut Cauliflower

I love the Coconut-roasted Broccoli that Funnyman whips up, but doing the same thing with cauliflower is equally incredible! At only two-ingredients, this will likely be a favourite in your home as much as it is in ours. Quick, uncomplicated … and simply heavenly. This recipe will serve 3 people as a side veg option on a keto diet, but Funnyman and I scoff the whole lot between the two of us alongside our Peppered Lamb Ribs quite often. He has both dishes waxed, so these are the nights I put my feet up and do nothing but watch him cook for ME for a change…
