Artichoke & Creamy Burrata Salad

For the salad
- 80 g (2.8 oz) baby spinach leaves
- 170 g (6 oz) char-grilled artichokes (store-bought), drained weight
- 65 g (2.3 oz) cherry tomatoes, halved
- 75 g (2.7 oz) burrata cheese, drained weight
- handful fresh parsley, finely chopped
For the dressing
- 3 TB olive oil
- 1 TB white wine vinegar
- 1 garlic clove, peeled and crushed with a garlic press
- salt and freshly ground black pepper
Instructions
- Drain the artichokes from its packaging. You will find chargrilled artichokes in the shelves in stores where all the fresh, chilled antipasti goodies are kept (marinated olives etc). Be sure they are char-grilled (you will actually see little charred pieces in the container. These are smoky and DELICIOUS) - and taste different to the regular, tinned antipasti artichokes on the shelves.

- Simply combine the spinach, artichokes and cherry tomatoes. Tear the oozy burrata cheese over the salad.
- Make a quick salad dressing by whisking together the olive oil, white wine vinegar and crushed garlic (which should be done using a garlic press for best flavour and texture). Season with salt and freshly ground black pepper.

- Just before serving, pour over the garlic dressing all over the salad and finish with a scattering of finely chopped parsley.
