This is a quick, easy and truly delicious salad using char-grilled artichokes. It serves 4 as a side dish, but could easily be enjoyed by two people as a meat-free main.
Drain the artichokes from its packaging. You will find chargrilled artichokes in the shelves in stores where all the fresh, chilled antipasti goodies are kept (marinated olives etc). Be sure they are char-grilled (you will actually see little charred pieces in the container. These are smoky and DELICIOUS) - and taste different to the regular, tinned antipasti artichokes on the shelves.
Simply combine the spinach, artichokes and cherry tomatoes. Tear the oozy burrata cheese over the salad.
Make a quick salad dressing by whisking together the olive oil, white wine vinegar and crushed garlic (which should be done using a garlic press for best flavour and texture). Season with salt and freshly ground black pepper.
Just before serving, pour over the garlic dressing all over the salad and finish with a scattering of finely chopped parsley.
