Gherkins or pickles are low in carbohydrates, making them a suitable keto-friendly snack or condiment. They contain electrolytes like sodium, which can help maintain electrolyte balance, especially during the initial stages of keto adaptation.
 
Cheese is an excellent source of both fat and protein, making it a staple in many keto diets. It is also a good source of calcium, which is essential for bone health.

Burger Salad Tacos

This is a fun way to enjoy all the familiar flavours of a cheeseburger – but in a fresh and light way!

Ingredients

  • 1 tsp olive oil
  • 2 garlic cloves, peeled and crushed with a garlic press
  • 500 g (17.6 oz) beef mince, high fat, (12-20%)
  • 60 g (2.1 oz) gherkin pickles, drained and finely chopped
  • 90 g (3.2 oz) mayonnaise
  • 90 g (3.2 oz) no added sugar ketchup
  • 2 Cos lettuce, leaves separated
  • 50 g (1.8 oz) full-fat strong Cheddar cheese, finely grated
  • 100 g (3.5 oz) baby plum tomatoes, sliced or chopped
  • salt, salt flakes and freshly ground black pepper

Instructions

  • Heat the olive oil in a large non-stick pan or wok over medium low heat. Add the garlic and cook until just softened. Add the mince and increase the heat to high. Cook until the beef has completely browned and safely cooked through, approx. 6minutes. Remove the pan from the heat and season with salt and freshly ground black pepper. Stir in half the chopped gherkins.
  • Make a quick burger sauce by combining the mayonnaise and ketchup in a small bowl. Set aside.
  • Arrange the best selected lettuce leaves out on a large platter. Add small dollops of the burger sauce, ensuring each leaf has equal amounts. Spoon in the cooked mince mixture, then top with the grated cheese, remaining gherkins, and sliced tomatoes.
  • Serve soon after assembling to ensure the ‘lettuce’ wraps are still fresh and crunchy. Season with salt flakes and pepper, if needed. So simple and delicious!
USEFUL TIPS:
  • When frying mince, be sure to use your wooden spoon to ‘chop’ into the mince to break it up.
  • Ideally, for keto, you want to use the highest fat mince you can, with 20% fat being ideal. However, if you cannot source 20%, use at least 12%.
