Cumin Lamb Rump Steaks with Spiced Cauli Rice

I love this creation – it’s packed with flavour and personality! I season the lamb with cumin and add some into the buttered cauliflower rice too (which itself is bejewelled with plenty of elements!). Its colourful, flavourful and a delight to tuck into!

Ingredients

  • 4 lamb rump steaks, (approx. 150g each)
  • 1.5 tsp ground cumin
  • 2 tsp olive oil
  • 50 g (1.8 oz) unsalted butter
  • 500 g (17.6 oz) cauliflower florets, blitzed in a food processor into ‘rice’
  • 2 cloves garlic, peeled and crushed with a garlic press
  • 4 spring onions, sliced (white and green parts kept separate)
  • 1 red chilli, finely chopped
  • 1/2 tsp cayenne pepper
  • 2 avocados, flesh diced
  • 1 lime, cut into 4 wedges
  • salt flakes and freshly ground black pepper

Instructions

  • Remove the lamb steaks from their packaging and season all sides with one teaspoon cumin, salt and pepper.
  • Heat the olive oil in a large non-stick pan over high heat and cook the lamb until done to your liking. I like mine pink in the centre, so I did approx. 4-5 minutes per side. Remove from the pan using tongs and set aside to rest for at least 5 minutes.
  • Using the same pan (there is no need to wipe it clean) on medium high, add the butter. Once foaming, tip in the cauliflower, garlic, white parts of the spring onion, half the chopped chilli, cayenne pepper and remaining half teaspoon of cumin. Cook, stirring continuously until the cauliflower has sufficiently cooked through, approx. 3-5 minutes. Season generously with salt and pepper.
  • Remove the pan from the heat and fold in the diced avocado.
  • Serve with rested lamb with the spiced cauli rice and garnish with the green ends of the spring onion and remaining chopped chilli. Squeeze the lime wedges over before tucking in. Season with additional salt flakes and pepper, if needed.
USEFUL TIPS:
  • Lamb rump steaks sometimes fall apart into two pieces when frying: don’t be alarmed if this happens. There is a lot of fat holding it together, so this is inevitable.
  • If any juices run from the lamb when it is resting, drizzle this over the rice for extra flavour!
  • Try this with steak if you cannot source lamb rump steaks.

  1. Hi there, this recipe looks scrumptious! Just a question on the carbs please. At the top of the recipe it says there are 12g of carbs per serving (which sounds high for Keto) but at the bottom of the recipe it says there are 5.8g of carbs per serving. Can you confirm which is correct please, or maybe give a breakdown if the carbs are reduced to net carbs due to fibre content etc. Thanks!

    1. Hi Zac, thanks for getting in touch. The carbs in this recipe are indeed 12 grams. The figure of 5.8 that you see is the percentage of carbs that make up the calories (5.8%). Hope this helps?
