Avocado, Lemon & Roasted Red Pepper Salad (Keto)

I had a jar of roasted red peppers* in the fridge and used them in this simple, yet delicious avocado salad where the zingy element of the lemon zest and juice steals the show! This will make a lovely side salad option to your protein (chicken, meat or fish). Alternatively, you could add boiled eggs, leftover grilled chicken pieces or even fresh mozzarella to create a more substantial main meal or ‘desk lunch’ option.

*For those in other parts of the world, red peppers are also called red bell peppers or capsicum. The char-grilled / roasted kind are sold in all stores, usually in the anti-pasti section. They have been charred, then peeled before being stored in brine, usually in glass jars. They have a lovely smoky flavour.

Pickled Avocado (Keto)

The people that pack rock-hard, under-ripe avocados into “ripe and ready” packaging are the first people I will come back and haunt one day! If you feel the same way, here is a great way to use up avocados that you have already sliced up, but are clearly not ready to eat. Simply pickle them in a clean jar along with vinegar, water and some other bits! I used mustard seeds, black peppercorns, coriander and chillies – but you can play around with other herbs and whole spices that will add a little flavour to your pickling liquid. I used one large avocado for this recipe and based the macros on this serving two people as a snack or condiment, so adjust accordingly. You could also dice up the pickled avo slices and use them in salads or Ceviche, like we did. Enjoy!

Avocado Cheesecake Lollies (Keto)

I churn out a lot of keto lollies for Funnyman. A LOT. While I don’t have a sweet tooth (I never have, even life before keto), but Funnyman loves his after dinner treats, so I try and keep things interesting for him by switching things up and changing the flavours of the lollies I make (in addition to the other sweet treats) I make for him! Here, I added cream cheese to the mixture – and it changed the texture in a beautiful way! Without telling him, I added avocado to sneak in some fibre and additional goodness and healthy fats… and this was how my Avocado Cheesecake Lollies were born! Hand on heart, these are now his favourite lollies. And just in case you were wondering – the flavour of avocado does not come through at all: just creamy, indulgent sweetness.

Avocado and Halloumi Salad (Keto)

Much like the Greek Village Salad recipe I posted ages ago, this salad is really all about the simplest of seasonings: An excellent quality olive oil and fresh lemon. The rest is up to using beautiful, fresh ingredients. I topped this salad with fried halloumi and its fabulous! Who doesn’t love squeaky cheese? The two parts that make up the salad (the avo & red onion mix in lemon juice + the tomato & red pepper mix in olive oil) can be made ahead of time. Then, just before serving – grill those halloumi pieces to golden perfection and combine the lot. Enjoy!

Keto Salmon Avocado Salad

This sensational salmon & avocado salad boosts a combination of flavours and textures that make every mouthful perfect harmony! Small details like toasting the pumpkin seeds beforehand, quick-pickling the thinly-sliced red onions and using toasted sesame oil makes this salad sensational. I used equal amounts of watercress and pea shoots as I find watercress can be a slightly dominating flavour for this salad.
