Caraway and Flax Crackers (Keto)

Funnyman loves the Mixed Seed Crackers I often whip up. They are ideal when mopping up guacamole, parfait or smoked mackerel paté for a quick snack. However, one day he reminded me of crackers he used to love when we lived back in South Africa many years ago (life before keto). I vaguely recall they were made with rye flour and had a very evident caraway flavour. So, I got to work adjusting my existing cracker recipe so that I could send him down memory lane with these caraway-flavoured ones. We were both delighted with the outcome! I even trimmed them in the long pieces just like he remembers. When trimming into even-sized pieces like I suggest below, you should be left with seven crackers, approx. 17g (0.6oz) in size and each one comes in at only 1.7g carbs! I store them in a sealed container for no longer than 3-4 days. If you find they lose their ‘crispness’, pop them into a hot oven for a minute or two to bring them back to life. Asparagus in Garlic Cream (Keto)

This is a rich and indulgent dish where I blanched trimmed asparagus before baking them in a rich, garlic cream. Please try and source the big, fat asparagus for this recipe – it makes it easier to trim for a more pleasant eating experience. BBQ Onion Skewers with Chilli Butter (Keto)

Our South African roots will be evident in the inspiration behind this dish. Firstly, you should know that Funnyman and I LOVE to braai (BBQ). We don’t use charcoal (shudder) and we don’t use gas (even bigger shudder) – we actually import our wood from South Africa via a fabulous company here in the UK that provides us with kameeldoring wood which is excellent. You see, South Africans don’t braai just to eat. We spend hours watching the logs burn down to coals while we chat with loved ones. And then, after everyone has eaten, we throw more wood on the fire and just watch the flames as we contemplate life! As you can imagine, coal and gas BBQs just won’t cut it for us.

Chilli Compound Butter (Keto)

One thing I really want to achieve here on Fats of Life is to INSPIRE people. I love being in my kitchen and I am an artist at heart. My brain never stops working when it comes to creating exciting things to keep our keto journey exciting, so blogging about what I get up to in the kitchen was a natural next step for me. Keto Chilli Sauce (for the brave)

I hope you love this spicy chilli condiment as much as Funnyman did (it lasted three days in our house!). Its a quick and easy method, but you will notice that I don’t cook all of the blitzed mixture. I still wanted some of that “fresh” element and I think it makes all the difference! The macros are calculated as one serving being 2 teaspoons which I weighed as 20g (0.7oz), so adjust accordingly if you decide to have less or more with your meal. Easy Smoked Mackerel Paté (Keto)

Super easy and deliciously creamy – this easy smoked mackerel paté / dip is an excellent way to increase your intake of Omega-3. I based the macros on a 50g (1.8oz) serving, which is a very generous amount spread over two large crackers, making it perfect to put out for the family as a snack. It kept well (covered) in the fridge for 3 days, and we enjoyed it over my Keto Mixed Seed Crackers, as pictured (cracker’s macros not included). Sausage and Creamy Turmeric Spinach Bake (Low carb)

This was an accidental creation of mine which I then had to recreate for this blog! Dynamite flavours come from the turmeric cream sauce which bake away in cooked spinach and pork sausages. I labelled this low carb and not keto as many sausages aren’t entirely keto-friendly. They often contain potato starch, gluten and several other things we try and steer clear from. However, I would be lying if I said I don’t indulge in delicious porkies once in a while – but when I do, I always opt for Tesco’s Finest Sausages which are 97% pork and come in at only 1.5g per two sausages: not bad. Bacon & Chive Fat Bombs (Keto)

I rarely feel truly hungry (a quick high-five to the keto lifestyle), but I do still enjoy a quick, convenient snack. On days when my biltong or droe wors has not yet dried (or times in lock-down when we had no nuts or pork scratchings in the house), these little morsels made a fantastic high fat snack to satiate us until dinnertime. (Dinner is usually when we have our only proper meal of the day – and its usually something special that I take my time with – here are some ideas as to what I make at suppertime in casa de Palmer!). Vegetable Gruyere Bake (Keto)

We always (and I mean ALWAYS) have broccoli, cauliflower and double cream in the house. I have played around with so many different ways to use those delicious vegetables and have made many different high fat cheesy bakes too. They are all equally delicious – we don’t even have a favourite. (Check out the SIDE DISHES category on this site to see them all.) Anyway, with this one, I wanted the beautiful, unique flavour Gruyere cheese to feature because I love flavour that slaps me through the face. I also added just a pinch of ground paprika to give a slightly different flavour dimension. Whip this out at your next Sunday roast – your family will love the rich decadence! Chicken Wings in Chilli Marinade (Low carb)

This is a spicy, fresh marinade that you can make yourself at home with only a tiny amount of effort. Despite the fact that there are 5 chillies in the marinade, the end-result is not as fiery-hot as you might think. I labelled this low carb (and not strict keto) because I include store-bought tomato ketchup (the reduced-sugar kind) in the recipe.  Either way, you will love this over the BBQ this summer! Creamy Garlic Broccoli with Tomato Relish (Keto)

I love cream-baked broccoli: its a simple dish which I throw together quite often. In this version, however, I enhanced the creamy mixture with sour cream and full-fat cream cheese and served the end-result with one of my favourite new homemade condiments: a quick relish made from finely chopped tomato and garlic. Spicy Paprika Macadamia Nuts

Next to biltong and droewors, NUTS are probably the most popular go-to snack in our house. They just tick all the boxes as a perfect keto snack: high in fat, fibre and protein. We try and steer clear of the store-bought roasted nuts for several reasons: many mixed nuts packets (while convenient) usually include peanuts and almost always feature vegetable oil – two things which should be avoided on keto. However… in the spirit of being honest and transparent, I would be lying if I said we didn’t always have a packet kicking about. Anyway, honesty aside… during COVID-19 lock down, I found a packet of halved macadamia nuts in the pantry and got to work straight away when Funnyman said he was craving something spicy as a snack. These did not last long in our house – they were delicious!

BBQ Ribs in Tamari & Skinny® Maple Syrup (Low carb)

My butcher hooked me up with a whopping kilogram of pork ribs, so I got to work creating a delicious glaze to brush over the ribs while we braaied one day on lock down. I used tamari (gluten-free soy sauce) and delicious The Skinny Food Co Sugar-free Maple Syrup along with other few bits. This will sufficiently feed 4 hungry people at your next BBQ – but I especially want you to try my version of pre-cooking the ribs ahead of going onto the grill. I wrap them in a completely air-tight parcel of foil, so they literally steam in their own juices for 3 hours. They fall off the bone. Heaven.

Ultimate Skinny Beer Bread (Low carb)

When I was younger, I was always asked to bring along a loaf of one of my “legendary” Beer Breads to friends and family BBQs. The flavour was indescribable and deserved its popularity, I even used to joke with everyone that I would leave the recipe in my last will and testament for loved ones. Anyway, after going keto in 2018, I often thought about that bread and hoped one day I would attempt a low carb version. Then, one day recently, Funnyman was searching online for low carb beers as he was longing to sip a cold one outside in the sun during lock down. He ordered a case of SkinnyBrands® Lager – and I immediately got to work! One bottle (330ml / 11.2 fl.oz) comes in at only 3g carbs per serving! As far as I know, SkinnnyBrands® is a UK company, so for my readers from other parts of the world, try this recipe using the lowest carb beer you can get your paws on – and stick to the amounts indicated. After a little research, Michelob Ultra comes in very low, so that may be a good option?

We love this with the thick layer of butter and some scattered sea salt flakes. I actually sliced the loaf and froze the pieces, so we always enjoy a slice at our little BBQs-for-two during lock down. (One serving = 1 thick slice, approx. 77g / 2.7oz)
