Keto Battered Onion Rings

Keto Onion Rings

“For those that loved my first best-selling cookbook, Keto Kitchen (2020), I want to encourage you to get your hands on my second book. I LOVE ALL my published books, but Lazy Keto Kitchen is my personal favourite to date! It not only features a keto-friendly ‘crumb’ to make crispy crispy creations like Crumbed Mushrooms or Jalapeno Poppers, but I showcase a keto BATTER! In my (beautifully-photographed and well-priced cookbook), I also have Fried Calamari (pg.54), Battered Fish (pg. 67) and Fried Mozzarella Balls (pg.41). On this post, however, I wanted to quickly share another way in which the sensational keto batter can be used. I make battered onion rings! These are completely indulgent and very low in carbs. They also make a great topper for your ‘bun less’ burgers!” – Monya

Pesto Chicken Keto Pasta (using Konjac noodles)

Pesto Chicken Keto Pasta

“This pesto chicken keto pasta is a quick idea where I throw together konjac noodles, pesto and chicken breasts. I also add roasted cherry tomatoes which add bites of sweetness. Remember, these noodles need to be rinsed well before using. I simmer them several times in batches of fresh water. This removes the funky packaging smell. Regarding the texture, well, you get used to it!” – Monya

Stuffed Spicy Courgette Beef Boats (Keto)

Stuffed Spicy Courgettes Keto

“You will love these stuffed spicy courgettes! This is a lovely, easy dish which takes a little long, but that’s only because I didn’t want to discard the courgette flesh that I scoop out to make the ‘boats’. Instead, I cook it down for a long time until it caramelises for maximum flavour, then incorporate it into the beefy mince stuffing. Using 6 courgettes here means 4 people can enjoy three boats each. ” – Monya

Lemon & Thyme Cheesy Keto ‘Gnocchi’ (Nut-free)

Lemon Thyme Keto Gnocchi

“This is my favourite way to flavour the cheesy keto gnocchi recipe in Lazy Keto Kitchen, (page 112) – which is available worldwide. Its simply fresh thyme leaves and finely grated lemon zest scattered over. These two ingredients complement each other beautifully so you could tuck in as is, or serve it alongside chicken or fish. The macros for this recipe are based on it serving two people, but it could be stretched to serve 4 as a light meal or small side dish (the gnocchi itself is very rich). ” – Monya

Thai Keto Crab Cakes with Cucumber Radish Salad

Thai Crab Cakes with Cucumber Radish Salad Keto

“These soft and delicate Thai keto crab cakes are enhanced with Thai red curry paste (actually available in all stores) and use an egg white and the all-essential psyllium husk powder to thicken and bind the mixture. This is a lovely, light meal that is perfect for the summer months. The best part, however, is the quick-pickled cucumber radish salad that offers plenty of flavour and crunch in every mouthful.” – Monya

Nutty ‘White Chocolate’ Bars (Keto)

Nutty White Chocolate Bars Keto

“These nutty white chocolate bars are lovely treats that will hold for a long time in the fridge as a grab-and-go, very sweet, high-fat bomb. You will notice I scatter sea salt flakes over the mixture before it sets. This adds great little bursts of salty flakes which complement a sweet treat beautifully. A company called Funky Fat Foods asked me to try out some of their products. While none of the posts on this blog are sponsored, I agreed I would play around a little and share a creation. I selected their ‘white chocolate’. On it’s own, a coconutty flavour comes through, so I melted it down and added more vanilla and a variety of nuts, resulting in a white-choc-rocky-road-type treat!” – Monya

I go on to make fried calamari, battered cod and even little mozzarella balls. On this post, I showcase prawns using that game-changing batter! – Monya

Monnie’s Sugar free Steelworks

Sugar-free Steelworks

“This is my version of a sugar free Steelworks – possibly one of the most refreshing drinks ever! Traditionally, Cola Tonic is used to make a Steelworks, but it is packed with sugar so I had to steer clear. I went in search for a sugar-free Cola Tonic, but only found ones coming in at £129 per bottle! I couldn’t believe my eyes, so I got to work playing around with what I could. There are two versions below, one using diet coke and the other using cola essence. Both are great, but I love the one using diet coke (the darker one in the picture) the most. The most important aspect in both is a generous couple of drops of Angostura Bitters! So yum!” – Monya

Bowl of Meaty Goodness (Keto)

Bowl of Meaty Goodness Keto Carnivore

DON’T HATE ME FOR LOVING THIS! This bowl of meaty goodness was inspired by a time where I would set aside a few hours once a month to batch cook my dog’s food. Using one of those enormous rice cookers, I boil up 10kg diced chicken breasts, liver and beef mince. After cooking, I reserve the broth (which I use to pour over their food) and stir in cooked brown rice and vegetables. This then gets portioned and popped in our chest freezer (and I can ‘relax’ for another 30 days). However, before I stir in the rice and veg, I set aside a small bowl of the cooked meat for myself and I enjoy it with a drizzle of olive oil and a pinch of salt flakes. This is such a treat and makes all that hard labour worth it! I recreated it here for my carnivore readers. Remember, liver is the most nutrient-packed food you can gift your body.” – Monya

Chicken Liver and Shiitake Stir fry (Keto)

Chicken Liver and Shiitake Stir-fry Keto

“This is a quick and easy chicken liver and shiitake stir fry that came about when I needed to use up sh*t I found in my fridge. I loved it so much, I made a note to perfect it a little and turn it into a post worth sharing here on Fats of Life®. I LOVE chicken livers, but we so often associate it with peri-peri or something similar. Here, I paired it with the unique (and stunning) flavour of fresh shiitake mushrooms and the result was superb. You can enjoy this over your favourite ‘base’, like courgetti, cauli-rice or konjac noodles, but I just tuck in as is! Easy and nutritious!” – Monya
