“DON’T HATE ME FOR LOVING THIS! This bowl of meaty goodness was inspired by a time where I would set aside a few hours once a month to batch cook my dog’s food. Using one of those enormous rice cookers, I boil up 10kg diced chicken breasts, liver and beef mince. After cooking, I reserve the broth (which I use to pour over their food) and stir in cooked brown rice and vegetables. This then gets portioned and popped in our chest freezer (and I can ‘relax’ for another 30 days). However, before I stir in the rice and veg, I set aside a small bowl of the cooked meat for myself and I enjoy it with a drizzle of olive oil and a pinch of salt flakes. Bowl of Meaty Goodness

Inspired by the dog's food I batch cook every month, this simple bowl of mixed meat is simply simmered, then enjoyed with a beautiful olive oil drizzled over. DON'T HATE ME FOR LOVING THIS!

Ingredients

  • 600 g (21.2 oz) skinless, deboned chicken thighs, chopped small
  • 200 g (7 oz) ground beef mince
  • 150 g (5.3 oz) lamb or calf liver, chopped small
  • 4 TB olive oil
  • sea salt flakes

Instructions

  • Boil the kettle while you prepare your meat. You want the chicken* in little bite-size pieces and the liver in very small dice.
    *I like to use chicken thighs because they remain tender with all that simmering, whereas breasts will overcook and toughen.
  • Place the whole lot in a large pan and add about 700ml (24 fl.oz) hot water. Bring to the boil, then reduce to a moderate simmer for about 30-35 minutes. You may want to skim off and discard any foamy impurities that rise to the surface.
  • It is done when you cut open a piece of chicken and it is no longer pink in the centre. (The mince and liver would have definitely cooked through after that amount of time.)
  • Use a ladle to remove all the broth until you are left with only the chunky meat mixture. Tipping the pan to one side helps. There is no need to discard the broth. I personally keep it in a little jug in the fridge. Once chilled, I can pick off the solidified fat that sits on the surface, then I heat up a small amount to pour over my dogs food every morning. (They aren't 'keto', so I monitor their fat intake carefully.)
  • The STAR OF THE SHOW is the olive oil that is drizzled over, approx. 1 tablespoon per serving. Don't forget to scatter over salt flakes before tucking in! So simple and addictive!
