“Turkey would not be my first choice on keto because its so lean. However, I had a packet of mince in the freezer, so I thought they would make spicy little sausage rolls. I used the delicious Baharat Spice mix to flavour the mince, then flavoured my fathead dough with paprika. Since turkey is such a lean meat, the sweet and spicy mayonnaise is perfect with every bite. A lot of love and preparation goes into these 8 little rolls, but you will see that there is plenty of preparation that can be done simultaneously.” – Monya

When it comes to enjoying delicious treats on keto, sausage rolls might not be the first thing that comes to mind. However, with a little creativity and the use of low-carb alternatives, you can indulge in a keto-friendly version.

Here, I made sausage rolls made using fathead dough filled with a Baharat-spiced turkey mince. The best part is the accompanying spiced onion mayo which I infuse with cumin and cayenne.
The ‘dough’ is made with a popular low-carb substitute known as fathead dough. This dough uses mozzarella, almond flour, cream cheese, and eggs to create a bread-like texture. I roll it out and fill it with portions of Middle Eastern spices.
To elevate the flavour profile, a spiced caramelized onion mayo is the perfect accompaniment. By combining caramelized onions with mayonnaise and infusing it with cumin and cayenne pepper, a tangy and slightly spicy mayo is created. The earthiness of the cumin and the subtle heat from the cayenne complement the flavours of the sausage rolls.

It is important to note that to maintain ketosis, it’s essential to track carbohydrate intake and ensure it aligns with your daily macro goals. Consulting with a healthcare professional is advised before making significant dietary changes. Best eaten warm, these puffy, cinnamon-flavoured rolls were made with sweetened Fathead dough. I know you may think I have gone bonkers suggesting a sweet treat made from cheese. But, fresh mozzarella and cream cheese are very mild in flavour and the ‘cheese’ flavour doesn’t come through at all. I went on to drizzle mine in a criss-cross fashion – and we enjoy them over Easter every year. Forgive my poor piping skills, you can decorate as you please (and the drizzle is included in the macros, which total in at only 4.1g carbs per roll). QUICK NOTE: Your pastry scraper is a very important tool (just as it is in the Ham & Gruyere Rolls recipe). It’s essential to gently nudge and shift the ‘dough’ when rolling…. Happy Easter, everyone!” – Monya

“Oh my… the flavours in this bacon and tomato keto gnocchi! I used smoked bacon lardons because they are chunkier (and fattier) than simply dicing up thin bacon rashers yourself. They also render so much glorious fat and flavour when frying up, and this is key to this dish. The tomatoes add lovely sweet acidity. If you can manage 9.9g carbs per serving, this will sufficiently feed 2 people. But it is very rich and filling, so you could divide this into 4 smaller servings and halve the macros accordingly. In this recipe, I use “gnocchi” made from almond flour, but if you prefer a nut-free version, I have a fabulous Cheesy Gnocchi in my second book Lazy Keto Kitchen (2021).” – Monya

“This is a basic, undressed ‘gnocchi’ recipe loosely based on the fathead dough concept. It looks a little rustic, but it does the job! It will need to be served with a sauce and some great ideas include Smoked Bacon & Tomato or Spinach and Pesto. The gnocchi itself is incredibly filling, so this recipe could serve 2 people as a main meal, or 4 as side dishe. (Then halve the macros accordingly.) UPDATE: This recipe is quite dated, and I now have a MUCH BETTER (nut-free!) “Cheesy Gnocchi” in my second book Lazy Keto Kitchen. ” – Monya

“This is a fantastic keto garlic bread using the fathead dough concept. This recipe will yield 12 slices and the macros have been calculated on one serving = 2 slices. If sealed well, almond flour will last a long time (I keep mine in the fridge). Be sure to also check out all the other Bread recipes on this site.” – Monya

“The Ham Gruyere Rolls I posted a while ago was so well-received, I decided to try a similar concept with homemade Pesto and Cheddar. I titled them “rustic” because they lop to the side after cooking. However, everything made at home with love looks a little imperfect!” – Monya

“These fathead sausage rolls are low in carbs, high in fat and worth all the effort. I know its #dirtyketo, but this is due to the use of delicious (processed) smoked Polish sausage which contains a little wheat and soy. However, for this giant whopper, I think its worth being a little filthy every now and then. The macros here do not include the spicy tomato relish but I highly advise that you whip one up. The sweet acidity it brings is just lovely! THIS RECIPE IS ACCOMPANIED WITH A VIDEO to help you along.” – Monya

“Now that you have waxed Fathead Dough (and hopefully tried Fathead Pizzas, why not shake things up a bit and try a ‘calzone’? I decided on a vegetarian filling and used spinach, mushroom and ricotta cheese. This is a very rich dish, so one will easily feed two people with a lovely fresh salad on the side.” – Monya

“These ham and gruyere fathead rolls use my version of fathead dough and the results are simply amazing! One roll is very rich and filling and comes in at only 3.8g carbs per roll! Some may struggle with perfecting the Fathead dough technique, but I have added step-by-step pics below to help you along. A very similar version of this recipe also features in my cookbook Lazy Keto Kitchen which is available worldwide.” – Monya

“This recipe shows you step-by-step how to make a flop-proof Fathead dough pizza base. I have not included any toppings in the macro-calculations, because we all have our favourite ones. Funnyman loves pepperoni or salami, and I love seafood with fresh mozzarella. These pizza bases are big and very filling, so the macros are based on 1/2 pizza base. Please adjust accordingly if you plan to devour a whole one (no judgement here). Please invest in a kitchen scale if you do not already have one. All the recipes on Fats of Life® are carefully developed using a scale. This ensures success with the end-product and helps with keeping an eyeball on your macros.” – Monya

“These crispy keto cheese nachos can be used to scoop up your favourite low carb dip, but I love them with my Guacamole. This recipe was based on using thinly rolled fathead dough where both sides are carefully crisped in the oven. Try this version, then play around changing up the cheese or herbs.” – Monya
