More on Creamy Keto Coconut Popsicles…
Coconut cream and full-fat coconut milk are two fantastic additions to the keto diet that provide numerous health benefits. The keto diet is a low-carbohydrate, high-fat dietary approach designed to help the body achieve and maintain a state of ketosis, where it primarily burns fat for energy. Both coconut cream and full-fat coconut milk align perfectly with the principles of the keto diet.

FOLLOW MONYA:
One of the most prominent benefits of these coconut-derived products is their high content of healthy saturated fats, particularly medium-chain triglycerides (MCTs). MCTs are a unique type of fat that the body can quickly convert into ketones, providing a readily available energy source for keto dieters. This can help boost energy levels, improve mental clarity, and support overall metabolic health.
Furthermore, coconut cream and full-fat coconut milk are incredibly low in carbohydrates, making them suitable for individuals aiming to minimise their carb intake to remain in ketosis. These products have a negligible impact on blood sugar levels, helping to maintain stable energy throughout the day.
Additionally, they contain essential nutrients like vitamins C and E, as well as minerals such as iron, potassium, and magnesium. These micronutrients contribute to overall well-being and support various bodily functions.

It is important to note that to maintain ketosis, it’s essential to track carbohydrate intake and ensure it aligns with your daily macro goals. Consulting with a healthcare professional is advised before making significant dietary changes. Creamy Keto Coconut Popsicles

Ingredients
- 60 g (2.1 oz) desiccated coconut
- 1/2 tin full-fat coconut milk, shaken well
- 375 g (13.2 oz) coconut cream
- 40 g (1.4 oz) powdered erythritol, confectioners
Instructions
- Toast the desiccated coconut in a dry, non-stick until dark golden. Set aside to cool completely.
- Place the coconut milk, coconut cream and sweetener into a bowl. Whisk vigorously to combine, then stir in the toasted coconut.
- Pour the mixture into 6 ice lolly moulds (100ml / 3.4 fl. oz) in capacity. (You may have a small amount of mixture leftover.) Click the lid/stick in place of each one, and place in the freezer overnight.
- Transfer the popsicles to the fridge 30 minutes before eating or simply run hot water on the outside of the mould to make it easier to slide out.
