Skinny® Maple & Roasted Hazelnut Lollies (Low carb)

When I stumbled upon The Skinny Food Co’s various sugar free syrups, my head burst with all the opportunities to create sweet, low carb dishes which would have otherwise been quite tricky. Here, I simply used their Sugar-free Maple Syrup to create ANOTHER lolly flavour for Funnyman. (Bless him, he is just a little boy in a 45-year old man’s body). Anyway, I also added toasted, chopped hazelnuts for additional crunch and texture – and it certainly got the thumbs up from him!

Yes, I am still churning out the lollies for Funnyman, but the look on his face when he sees a batch in the freezer is worth the time spent making them – which happens to be only 5 minutes! Here, I mashed up raspberries and cooked them down a little with some lemon juice bringing a sharp tart flavour. A quick mix with powdered Erythritol (my favourite brand is Swerve®), full-fat yogurt and some double cream and we had another winner! I told you I was a lolly-making machine! My Homemade Keto Coconut Ice cream was so popular with Funnyman, I used the leftover mixture to make keto coconut popsicles. If you like the idea of keto lollies, do check out all the lolly flavours on this site (all of which make Funnyman giddy with excitement when he notices a fresh batch in the freezer… :) I struggle to find coconut cream at most stores (although ASDA sometimes has the Blue Dragon brand – which is what I used. “Creamed coconut” or “coconut block” did not work for me, so I highly encourage you to source the one I use. Funnyman loves his after-dinner treats so much (my Blueberry Lollies and Keto Brownies are his favourite), but I am getting bored churning them out since we started keto a few months ago, so I am now on a mission to shake things up and experiment with different flavours. These lollies were made using raspberries and rose water and I added a drop or two of pink food colouring to make them pretty! Fragrant and creamy with little tart raspberry bits throughout, you should definitely give these a try!

Funnyman wasn’t entirely convinced when I broached the subject of doing keto with me. He has a massive sweet tooth and the thought of giving up his after-dinner treats didn’t sit well with him. A client of mine in the US suggested I try Swerve® (a brand that makes confectioner’s / powdered Erythritol) as a sugar replacement in my cooking and baking and I have never looked back. After Funnyman watched the documentary MAGIC PILL in May 2018, he was amped to start. These lollies were actually the first thing I made him. Of course, I then had to become a lolly-making machine because he happily enjoys one of these most nights.
