“This almond and coconut biscuit cake recipe started out as a trial for trying to make keto shortbread. I did not get it right and I assume this is simply because we do not have the same important components found in wheat flour and real sugar to give us those results. However, this recipe was still tasty and worth sharing even though I was troubled as to what to call it. It is not a cake (I used no raising agent and it is not ‘fluffy’), but it is also not a dense shortbread. I would describe it as a delicate biscuit/cookie-type consistency. Almond and Coconut 'Biscuit Cake'

Its not quite shortbread, and its definitely not cake: but its delicious! So, I called it almond & coconut biscuit cake! Delicious with a little double cream drizzled over!

Instructions

  • Preheat the oven to 160°C (fan oven). This is 180°C for conventional ovens (or 350°F / gas mark 4). Grease the base and sides of an 18cm loose-bottomed fluted tart tin and line the base with a circular-cut piece of baking parchment paper.
  • Combine the almond flour and coconut flour in a bowl. In a second bowl, whisk the egg well.
  • Tip the softened butter into a bowl. Softened butter simply means that you have left the butter at room temperature for several hours: it does not mean the butter has been melted. Add the sweetener and use an electric hand mixer to mix the mixture together until it is light and fluffy.
  • Add the egg and continue to mix. It may look like the mixture is splitting, but it will come together.
  • Add the almond flour mixture and switch to using a wooden spoon, combining the mixture very well. Tip the mass into your prepared tart tin.
  • Use a silicon spatula to compress the mixture down to form an even compact layer. Get stuck in with clean fingers in the fluted areas, if needed. Pierce the top with a fork many times.
  • Place in the oven for 20 minutes, rotating the tray halfway through.
  • Remove and scatter over the additional half teaspoon of sweetener.
  • Remove the whole lot from the tin and slice while still warm. Very gently slide the pieces onto a cooling rack (they are fragile and still crumbly) and leave to cool completely as they will lose their 'crumbliness' once cooled.
    Simple and yummy dipped in coffee as a late afternoon sweet treat!
