“I never tire of thinking up exciting ways to enjoy salmon and all its essential healthy fats. Here, it is lightly coated in toasted spices, then fried in butter. The accompanying garlic-roasted veg offers additional flavour and texture. I like my green beans to still retain some ‘crunch’, but it’s the bursting cherry tomatoes that offer sweetness in every mouthful. Just lovely! – Monya

“This sesame salmon and pak choi dish is a quick and easy meal for salmon lovers. Big on flavour and small on effort, this lovely, light dinner-for-two boasts the intoxicating flavour of toasted sesame oil which brings a little life to the pak choi (also called bok choy) and crispy salmon. Its almost too easy!” – Monya

“Beautifully-cooked salmon (with soft, moist flesh and crispy skin) doesn’t need much else to make it shine. Here, I played around making a delicious and interesting accompanying sauce. I blended char-grilled red peppers, yogurt and a little sour cream. The creamy and slightly acidic sauce complemented the salmon beautifully – without overpowering it. The second time I made this dish, I included finely chopped red chilli for a slightly fiery element, and I highly encourage you to do the same because its lush!” – Monya

“Need a pretty-looking appetiser? These little domes are simply made using seasoned cream cheese wrapped in smoked salmon. To achieve the cute dome shape, I used clingfilm-lined mini pudding (dariole) moulds. They were then simply tipped upside down before serving. Try these with slices of toasted Quick Chia Keto Bread (not included in macros) for a lovely, fresh appetiser for four people.” – Monya

“Funnyman tasted this salmon with spinach bake and said “babes, you don’t get older – you just get better!” Hahaha! I loved that! I am my own worst critic and often remake dishes plenty of times before I write up the recipe and post them here. This lovely dish has such simple, readily-available ingredients. The acidity of the lemon squeezed over at the end is essential, so don’t forget about it. On the subject of tomatoes, here is a great little article on planting and growing cherry tomatoes. UPDATE: Apologies, but I have taken this recipe off the blog because, since posting it, I worked very hard to bring you a new-and-improved version that now features in my cookbook Keto Kitchen. It has proved to be one of the most popular recipes in the book (which doesn’t surprise me – its gorgeous!)” – Monya

“This is a mighty big breakfast where each serving is exactly as pictured. Two halves of toasted Keto Breakfast Muffins, topped with smoked salmon and perfectly poached eggs. The whole lot is smothered in Keto Hollandaise Sauce. A keto salmon eggs benedict is what I called it. As the pic shows, its a generous meal – at only 3g carbs. I think its good enough for any time of the day… so tuck in!” – Monya

“When prepared properly, I love konjac / shirataki noodles. I have tried many brands, but here in the UK, Eat Water has got them spot-on with their “slim range”. In this recipe, I poached salmon in coconut milk which was infused with lemongrass, chili and ginger, then served it over warm ‘fettuccine‘ and added toasted desiccated coconut for additional texture and flavour. Its a lovely, light dish which happens to be very filling.” – Monya

“Afternoon Tea, anyone? These lovely little salmon sandwiches are made from slices of my Keto Soda Bread. The macros are calculated using cream cheese, but you could shave off more carbs by using use goat’s cheese. One serving = 2 slices, as pictured.” – Monya

“I would choose salmon over bacon any day! This bowl of goodness is the ultimate keto breakfast! It is filling and will likely to keep you satisfied well into the day. I used soft goat’s cheese, but if the idea of eating such a strong cheese in the morning makes you want to throw something at me, use full-fat cream cheese (soft cheese) instead. “This salmon and avocado salad boosts a combination of flavours and textures that make every mouthful perfect harmony! Toasting the pumpkin seeds, quick-pickling red onions and using sesame oil all contribute to making it sensational. I used equal amounts of watercress and pea shoots as watercress can be a slightly overpowering. If you love the idea of smoked salmon, check out my Best-ever Smoked Salmon Salad on this site.” – Monya
