“I simply had to include an easy ratatouille on this blog! Here, plenty of colourful vegetables are used, making this a fibre-packed side dish. This version of mine is literally an “all-in-a-very-large-pan-at-the-same-time” kind of ratatouille, so it could not be easier! Packed with flavour and featuring varying textures, this recipe can serve 4 (as a side dish), but if the macros seem a bit high, it could easily be stretched to 6. This easy ratatouille can be served alongside any protein, like chicken, pork, fish and even steak. Pork chops feature in my pic (only because this is how we enjoyed it the day I took the photo!). The macros shown indicate the ratatouille only.” – Monya

“Paprika prawns with lime mayonnaise are a quick and tasty way to enjoy prawns. I add ground paprika and garlic powder before flash-frying the prawns in butter. The star of the show is the lime mayonnaise where each prawn can be dipped into! This is a great appetiser or tapas idea for two, but you can make this your dinner with a salad.” – Monya

“What a super way to get the family to eat more greens! I love this broccoli and bacon salad – and personally need no convincing to eat more broccoli because I love it! If you add bacon and mayonnaise to just about anything, you have a winning dish! I especially love the crunch and texture the toasted seeds and nuts bring, so please don’t omit them.” – Monya

“This sesame salmon and pak choi dish is a quick and easy meal for salmon lovers. Big on flavour and small on effort, this lovely, light dinner-for-two boasts the intoxicating flavour of toasted sesame oil which brings a little life to the pak choi (also called bok choy) and crispy salmon. Its almost too easy!” – Monya

“This is one of those keto recipes where I wake up giddy and excited about the recipe I am about to post! Here, I used a faux ‘pastry’ made from my version of the popular ‘fathead dough’ concept. However, the part that tickles me pink is the delicious filling! Please try it! But, remember: you saw it here first!” – Monya

“I have been wanting to make my own Cajun spice mix for a while now because I read the label of my store-bought bottle and noticed sugar present. In the interest of keeping the rest of this dish super-simple, I simply scatter it over cauliflower and chicken drumsticks before baking. If three drumsticks per person seems too much for your daily protein, just keep the extra for lunch the next day. The lime and sour cream sauce is a lovely, soothing drizzle over the dish, so don’t skip it! This is perfect with a scattering of finely chopped coriander (cilantro). Enjoy!” – Monya

“There were several dud keto lemon meringue pies here in casa de Palmer before I got this version just perfect! Zingy and refreshing, this is the perfect low carb dessert to serve at your next BBQ. Please pay attention to my tips in the method. They are all there for a reason, inspired mostly from my own failures. You will notice I add desiccated coconut to the base, and that is because back in South Africa we would make a lemon meringue tart base using crushed “Tennis Biscuits”. These are delicious store-bought biscuits that have a subtle, yet lovely coconut flavour.” – Monya

“These baked lemon cookies uses coconut flour in place of almond flour, yielding a slightly different, more dense texture than one might expect. They call for some of my Keto Lemon Curd and are packed with so much delicious zinginess. I go further and add finely grated lemon zest. The eggs and cocoa butter holds the whole lot together (so be sure to slice only once cooled). I also threw in some ground chia for additional fibre. Simple and yum!” – Monya

“This sharp, sweet and tart keto lemon curd has myriad uses. Funnyman loves a spoonful folded through plain yogurt. Remember, we aren’t working with familiar ingredients here. I found that my ratios of elements used (pretty standard for a curd) solidifies in the fridge and I suspect its the erythritol. Fear not, it can easily be brought to a lovely texture by staying at room temperature for a bit. A good stir is always helpful. As with most things, it is best enjoyed soon after making.” – Monya

“This is a delicious twist to a keto cauliflower bake. I infuse warm cream with fresh rosemary and smashed garlic. The flavoured cream is poured over cooked cauliflower, then baked in the oven. It is superb at the side of your next Sunday roast!” – Monya

“I love these celeriac steaks with salsa verde! Celeriac has an unusually beautiful flavour and one of the few ‘root’ vegetables that are low enough in carbs to enjoy on the keto diet. You can run a search on the site for all my celeriac recipes, which may come in useful here, as I only use 2 rounds from a celeriac, leaving you with plenty leftover. You will need to find creative ways to use it up! There is an accompanying salsa verde sauce here which will yield a little more than you will need, but leftovers can be stored in the fridge and stirred through other dishes.” – Monya

“I used my vegetable peeler to ‘shave’ 200g (7oz) of thin celeriac flesh to make celeriac crisps! This was just enough to season and pop into my Air Fryer (on the dehydrate setting). After 3.5 – 4 hours, I was pleasantly surprised! While I was only left with 25g (0.9oz) – after it lost all its water content – it made a decent enough batch. These are best enjoyed soon after making, but you could pop a little bag of silica gel sachets into a container to stay as crisp as possible. These crisps will serve 4 as a little crunchy snack.” – Monya

“I love broccoli, but I especially love ‘broccolini’ (Tenderstem) which makes for a more attractive presentation. This broccolini with sesame dressing is a delicious side veg option. It is simply cooked broccolini smothered in a quick and easy dressing boasting the intoxicating flavour of toasted sesame oil and a little tamari (gluten-free soy sauce).” – Monya

“This slow cooked lamb with rosemary cauliflower mash is a beautiful meal that features that tastiest garnishes! It is rich and filling, so I advise it is served between 3 people, and not 2. Truthfully, some effort is required, but many things can be done at the same time. You will also learn to make a keto ‘gravy’ while you are at it! Macros are calculated assuming you are serving 3. If you find yourself scoffing the whole lot between two people, bear in mind the carbs will increase to 13g per serving.” – Monya

“This dairy-free dessert was created for those readers with dairy intolerance. To maximise the lovely coconutty flavour, I use coconut oil, coconut flour, coconut milk and desiccated coconut. I reduce the coconut milk over high heat to intensify the flavour and evaporate most of the moisture. This results in a thick, creamier mixture. Don’t skip the lime zest garnish – its a lovely touch. ” – Monya
