Chocolate Mousse Lollies (Low carb)

Creamy and chocolatey, these lollies were made with whipped cream, giving a light, airy texture which makes me rethink how I have been making all the other lollies up until now. A simple addition of confectioner’s sweetener and melted 85% Lindt®, and you have a dreamy after-dinner treat. I marked this low carb and not strictly keto, due to the presence of soy in the Lindt®. As we know, soy is an inflammatory food and should be avoided on the keto lifestyle. However, if you are simply living the ‘if it fits your macros’ lifestyle, these lollies will be a great addition to your summer creations. The lolly moulds I use are 100ml / 3.4 fl. oz capacity, but there is so much air whipped into the mixture, you will only use about 70g of mixture to fill each mould. This was how the macros were calculated. I also added a few drops of chocolate essence which really lifts the flavour to another level – you will love it!

These are great little yogurt pots, made using a combination of full-fat Greek yogurt and whipped double cream (sweetened with a little confectioner’s Swerve). I mashed fresh raspberries to stir through for some lovely natural sweet tartness, and I couldn’t resist adding ground (milled) flaxseed for added goodness and fibre. I LOVE the combination of plain yogurt and ground flax – it reminds me of the milk I slurped up as a child after finished a bowl of All-bran flakes. It adds a lovely ‘bran’ flavour to these yogurt cream pots and I am sure you will love it as much as I do. It will make for a great high-fat breakfast, but I marked this under dessert category too because… well, why not?

This is no April Fools joke! Each slice of this dreamy low-carb chocolate and raspberry tart comes in at only 5.7g carbs! I melted 85% Lindt and whisked in warm cream and butter making a creamy chocolate filling to cover a base made with almond flour and cocoa powder. I love the contrast of dark chocolate with tart, sweet raspberries and thought this was another great way to pair them up. Not only is the tart garnished with fresh raspberries, but there are plenty hidden right there in the set ganache too! Just lovely…

Yes, I am still churning out the lollies for Funnyman, but the look on his face when he sees a batch in the freezer is worth the time spent making them – which happens to be only 5 minutes! Here, I mashed up raspberries and cooked them down a little with some lemon juice bringing a sharp tart flavour. A quick mix with powdered Erythritol (my favourite brand is Swerve®), full-fat yogurt and some double cream and we had another winner! A lovely, keto-friendly warm dessert to enjoy alongside pouring cream, my Keto Coconut Ice Cream or Keto Vanilla Ice Cream. The sharp, tart berries shine alongside the coconutty flavour of the crunchy crumble. If you have 6 ramekins, you may be better off baking these in them (as opposed to one pie dish), which makes for easier serving. If you choose to do this, place all the ramekins onto a tray when baking to ensure safe removal from the oven. #SafetyFirst

Sweet and Creamy ‘Fat Pots’ (Keto)

Super simple little creamy sweet keto fat pots (topped with tart raspberries to cut through the rich creaminess). The recipe makes 4 small pots and can be done in ramekins, but I used little plastic pots which I found on amazon. (Ignore the product description that says they are disposable – I wash and re-use them.) Simply wrap in clingfilm and take these babies to work with you! Homemade Keto Coconut Ice Cream

If you are ambitious enough to own an ice-cream maker (I invested in this one), this Keto Coconut Ice cream should definitely be your first attempt. I struggle to find coconut cream at most stores (although ASDA sometimes has Blue Dragon brand – which is what I used). “Creamed coconut” or “coconut blocks” did not work for me, so I highly encourage you to source the Blue Dragon Coconut Cream. For your benefit, here is the link to get it online. I also toasted the desiccated coconut to add to the mixture before churning to make it even more coconutty. Get churning!

I made a batch of these mini meringue bites to use in a blueberry mess I was playing around with one day. They are so delightful and they are a perfect sweet treat to pop into your mouth when you walk past them. (They lasted about half a day in my house with Funnyman’s sweet tooth!) It’s lovely when added to whipped cream and some blueberries or raspberries and you have yourself a tasty mess..

Funnyman loves his after-dinner treats so much (my Blueberry Lollies and Keto Brownies are his favourite), but I am getting bored churning them out since we started keto a few months ago, so I am now on a mission to shake things up and experiment with different flavours. These lollies were made using raspberries and rose water and I added a drop or two of pink food colouring to make them pretty! Bribing Funnyman with my brownies is a nifty way to get him to do stuff around the house. I learnt this in wife-training school. He loves these keto brownies. They are the perfect size to hit the sweet spot and they make great fat bombs. I don’t have a sweet tooth at all, so making a batch of these along with other sweet treats for him is my way of showing him how much I appreciate him going on this Keto journey with me. The brownies store well in the fridge (although they would disappear in a day if I did that), so I freeze them individually after cooling and slicing. We always have double cream in the house, so Funnyman reheats them slightly and then pours a little cream over them. Happy Husband = Happy Wifey…

Funnyman wasn’t entirely convinced when I broached the subject of doing keto with me. He has a massive sweet tooth and the thought of giving up his after-dinner treats didn’t sit well with him. A client of mine in the US suggested I try Swerve® (a brand that makes confectioner’s / powdered Erythritol) as a sugar replacement in my cooking and baking and I have never looked back. After Funnyman watched the documentary MAGIC PILL in May 2018, he was amped to start. These lollies were actually the first thing I made him. Of course, I then had to become a lolly-making machine because he happily enjoys one of these most nights.
