Homemade Keto Coconut Ice Cream

Deliciously creamy keto coconut ice cream, coming in at 5.6g carbs per serving (1 serving = 2 scoops - with each scoop approx. 50g / 1.75oz).

Ingredients

Instructions

  • Toast the desiccated coconut in a dry, non-stick until dark golden. Set aside to cool completely.
    Toasting coconut
  • Place the coconut cream, coconut milk and sweetener into a large bowl. Whisk vigorously to combine, then stir in the toasted coconut.
  • Transfer the mixture to your ice-cream maker and churn until done, this takes approximately 30-35 minutes.
  • Serve two scoops per person (approx. 50g / 1.8oz each) when done and garnish with a little desiccated coconut, if desired.

    1. Hi Sue, ice cream churners ensure a smooth, creamy frozen mixture, whereas freezing it ‘as is’ will result in larger ice crystals forming, and therefore not a very nice mouthfeel. xxx
