Keto Creamed Spinach

Keto Creamed Spinach

“This fabulous keto creamed spinach is perfect alongside a juicy rib-eye. It serves two people, so double up the ingredients to feed more. I gently cook shallots and garlic for added flavour then add the spinach. It takes some patience and constant stirring, but the results are crazy-amazing!” – Monya

Thai Prawn Curry with Cherry Tomatoes (Keto)

Keto Prawn Curry

“Fragrant, spicy, creamy… this Thai prawn curry was made using Thai yellow curry paste and coconut milk. I struggle to find Thai yellow curry paste in the stores here in the UK, so I buy it online. It’s authentic, delicious and affordable. I quickly cook the prawns before starting the curry, then add them back in later to warm through before serving. This prevents an unsightly grey soup and delays the sauce reducing. I learnt this from experience! The sauce is reduced until thick and creamy and then simply poured over konjac pasta. The plump prawns, sweet cherry tomatoes, salty fish sauce, spicy chilies, acidic lime and the fragrant coriander create perfect harmony. I also added a teaspoon of powdered erythritol to finish it off with some much-needed sweetness. Simply put – you need to eat this!” – Monya

Smoked Paprika Chicken Chorizo Bake (Keto)

“This is why you must try Cauliflower Rice! I added the cooked cauli-rice to the chicken roasting dish halfway through and it absorbs all that glorious smoked paprika flavour. This chicken and chorizo bake uses the Fats of Life Cauliflower Rice recipe, which you will notice only serves 4. You should therefore make 1 and 1/2 times to yield enough for 6 people (and this is also how the macros were calculated.)” – Monya

Mark’s Famous Pepper Chicken (Keto)

“Bless his socks, this is what Funnyman makes me when I need a night off from cooking. When we are outside, he loves to make me Lamb Ribs on the braai (BBQ). In that recipe, he also smothers the meat in black pepper. That man loves his black pepper! The accompanying sauce is a mix of mayo and Sriracha and I have included it in the macros because that’s how we enjoy it. If you prefer a ‘stricter / cleaner’ dip, simply stir homemade chili paste into your homemade mayo.” – Monya

Keto Courgette and Brie Soup

Keto Courgette and Brie Soup

“Inspiration for this courgette and brie soup recipe came from my darling friend in Cape Town, Little Debbie Bryson who makes it at her sop-en-dop (soup and booze) party every year. Since moving to UK, I have sadly missed so many of them. This is for you LDB, I know it doesn’t compare to your version, but I slurped mine up with a longing lump in my throat. The recipe makes two hearty bowls, but you could make it stretch to 4 servings and enjoy it as a late-afternoon light meal if the macros are too high for you.” – Monya

“I know I am coming late to the cauliflower-crust pizza, but I wanted to try it myself and develop a recipe that is tasty and works! Follow my version below and your gut will thank you. It’s not only high in fibre, but with the addition of low carb toppings, you could fool yourself that you are having The Real Thing. 1 pizza = 2 servings, and it comes in at 11g carbs per serving (including toppings). If you aren’t convinced, try out my Fathead Pizza Base, which is just as delicious!” – Monya

Keto Creamy Pesto-stuffed Chicken Breasts

Keto Creamy Pesto-stuffed Chicken Breasts

“I have made this dish so many times and it just keeps getting better. It’s not easy doing something remarkable with chicken breasts: they can be somewhat underwhelming and can easily dry out. These are juicy, moist and bursting with flavour. I love smoked paprika and rubbed the breasts with it before frying on both sides, then stuffing and finishing in the oven. The stuffing was simply two ingredients that when combined are simply out of this world (one being my Homemade Basil Pesto which you really must try). Enjoy this simple, mid-week meal of pesto-stuffed chicken breasts – it may become your new breast friend (… see what I did there?)” – Monya
