Let’s start with the star of the plate — the salmon. Delicately seasoned with crushed coriander and cumin seeds, it becomes a mouth-watering centrepiece. To accompany the salmon, we have garlic-roasted cherry tomatoes and green beans. Bursting with natural sweetness, the vegetables are roasted until tender and caramelized. The addition of garlic lends a subtle tang, enhancing the overall taste profile. The tomatoes provide a burst of vibrant colour, antioxidants, and a touch of acidity. The green beans add a refreshing element as well as a good dose of fibre.

Citrus and Spice Salmon with Garlic Veg
Per serving
Ingredients
For the garlic veg
- 150 g (5.3 oz) green beans, (trimmed weight)
- 65 g (2.3 oz) cherry tomatoes
- 2 cloves garlic, peeled and finely chopped
- 1 1/2 TB olive oil
- salt and freshly ground black pepper
For the spice mix
- 1 tsp coriander seeds
- 1 tsp cumin seeds
For the salmon
- 1 TB unsalted butter
- 2 fillets salmon (skin-on)
- 1/2 lemon, (juice and finely grated zest)
- sea salt flakes
Instructions
- Preheat the oven to 200°C (fan oven). This is 220°C for conventional ovens (or 425°F / gas mark 7).
- Place the trimmed green beans, cherry tomatoes and finely chopped garlic to a bowl. Drizzle over the olive oil and season with salt and pepper. Toss to combine and evenly coat, then spread the whole lot out onto a small baking tray. Bake in the oven for 10 minutes.

- In the meantime, make the spice mix. Toast the whole coriander and cumin seeds in a moderately hot, dry pan until fragrant. Crush lightly in a pestle and mortar and set aside.

- Using the same non-stick pan, melt the butter over high heat. Once foaming, cook the salmon skin-side down until the skins are golden and crispy.

- Gently flip the salmon fillets over and add all the spice mix to the pan, along with the freshly squeezed lemon juice (catch the pips!). Cook until the salmon is done to your liking, spooning over the delicious spiced lemon butter in the pan. I like my salmon still slightly dark pink and "jelly-like" in the centre, but if you prefer it very well done, leave it on the heat for a little longer.
- Season the salmon with salt flakes and freshly ground black pepper and serve it with the garlic roasted vegetables on the side. Scatter over the finely grated lemon zest to finish.
