“This citrus and spiced salmon with garlic veg recipe is super quick and easy. More so, it takes no time at all to throw together. You will love the flavours from both the lemon and the crushed spices used. Double up the ingredients if you are cooking for more than 2 people. I like my salmon dark pink and still ‘jelly-like’ in the centre, but you can keep yours on the heat for longer if you prefer. The most important thing is that the toasted spices are included and the lemon butter is continuously spooned over while the salmon cooks. I love this with the garlic green bean and cherry tomato side dish. Green beans are so yum when roasted like this, and the cherry tomatoes (which partially ‘burst open’) offer little bites of sweetness with every bite.” – Monya

“If you have fresh fish available, I would highly recommend whipping up a quick keto ceviche! I tried ceviche for the first time in Costa Rica and loved it so much. I ordered it every time we went out to eat just to compare which local restaurant made it the best. Well, they were all fabulous – and they all added their own little twists. We enjoyed this with my Keto Mixed Seed Crackers for a delicious, fresh summer lunch. I also stirred through diced Pickled Avocado (in place of regular avocado), and it adds a lovely flavour dimension. NOTE: If you prefer not to use limes, lemon juice will work equally well, but I love the classic combo of lime, coriander and chilli. Enjoy!” – Monya

“This is a very simple fish dinner that requires only a little effort. Skinless cod fillets are very gently baked in the oven while butter is browned and infused with garlic on the stove top. After straining, I warm the butter through with little capers (which add great bursts of salty flavour) then pour it over the fish along with a generous squeeze of lemon. The night we enjoyed this, we had it with Fresh Tomato and Garlic relish which was an excellent accompaniment and highly recommended. “Fish, glorious fish! I am a huge fan of all seafood and am trying to include more fish in my diet. A well-cooked piece of fish needs nothing more than a little salt and acidity (like lemon juice) to make a satisfying, healthy dinner (along with some high fibre, keto-friendly vegetables of course). These sea bass fillets have a lovely crispy skin and melt-in-the-mouth flesh, but you can use any fish that you like. I had some fun playing around with a flavoured butter to accompany my fish, so I combined softened butter with chili powder, lime juice and salt, before setting in the fridge and slicing cute discs to melt over.
