“Super easy and deliciously creamy – this easy smoked mackerel pate is an excellent way to increase your intake of Omega-3. I based the macros on a 50g (1.8oz) serving, which is a very generous amount spread over two large crackers, making it perfect to put out for the family as a snack. It kept well (covered) in the fridge for 3 days, and we enjoyed it over my Keto Mixed Seed Crackers, as pictured (cracker’s macros not included). If you have any smoked mackerel to spare, throw it in a lovely fresh salad like I did here. ” – Monya

“The first time I had padron peppers was in Barafina in Soho, London around 2015 or 2016. Funnyman and I were drowning our sorrows. I cannot recall exactly why, but I suspect it was something financial. The irony was that we sat in this restaurant for about 4 hours and ordered three-quarters of the tapas menu items washed down with plenty of wine. This was obviously in life before keto. Whatever was bothering us that night was soon forgotten (along with our financial common sense). However, it was the padrón peppers that were memorable for me. Eaten whole, this is a risky little appetiser as some are hot and some are not. They are simply the perfect appetiser for someone who likes to live on the edge and I was delighted when I saw they are now readily available at the supermarket. I have made this several times and never encountered a spicy one, so perhaps not that risky after all?” – Monya
