Parmesan and Tomato Iceberg Salad (Keto)

Parmesan and Tomato Iceberg Salad Keto

“This keto salad is one of my favourite to throw together because I always have these elements in the fridge. In summertime, while Funnyman takes care of the meat on the braai (BBQ), I quickly whip this up. It takes me less than 15 minutes! It also makes a great keto lunch idea if you add pieces of cooked, leftover roast chicken.” – Monya

Chicken Mozzarella Salad with Fennel and Lemon Keto

“Many readers are looking for packed lunch options. I apologise I don’t have many of those. I work from home, so I am normally nibbling at the dishes I shoot for clients (or indeed for this blog). But, I have heard you! Here, I have breathed a little life into the standard ‘chicken salad’, making it exciting and packed with interesting flavours. I suggest using up leftover grilled chicken for this recipe (or even store-bought cooked chicken pieces will work great) and have offered a few handy tips on how to take to work and quickly assemble in seconds when lunchtime comes around. Enjoy!” – Monya

Chicken Mayo Open Sarnies (using Keto Seed Loaf)

Chicken Mayo Open Sarnies Keto

“This is just a quick idea where I made mini chicken mayo sandwiches using slices of my Seed bread. That lovely bread recipe in my first cookbook Keto Kitchen, page 20. I simply tossed cooked chicken pieces in Homemade Mayonnaise and enjoyed it with sweet tomato slices and avocado. Clean eating all the way! TIP: If any seeds fall off the crust of the loaf, scatter them over your sandwich for extra crunch and texture. The macros include the whole lot (two slices, as pictured): not too bad for a lovely lunch using all of your efforts.” – Monya

Ham and Gruyere Fathead Rolls (Keto)

“These ham and gruyere fathead rolls use my version of fathead dough and the results are simply amazing! One roll is very rich and filling and comes in at only 3.8g carbs per roll! Some may struggle with perfecting the Fathead dough technique, but I have added step-by-step pics below to help you along. A very similar version of this recipe also features in my cookbook Lazy Keto Kitchen which is available worldwide.” – Monya

Quick Chia Bread Keto
90 second Keto Microwave Chia Bread

“Even in Life Before Keto, I rarely ate bread. When I did indulge, I always regretted it afterwards. I felt bloated and miserable and wouldn’t poop for a week (no bacon butty is worth that! I have therefore never missed bread when starting keto. However, being human and all, the craving for a slice of toast with butter-and-Bovril still hits me every now and again! I am well-chuffed with this alternative! Give it a try and then pat yourself on the back for being so dedicated.” – Monya

Its nothing fancy, but it will hit the spot. One serving is one open slice, as pictured, but double it up and have two if your daily macros allow it.” – Monya

Keto Pesto ‘Pasta’

Keto Pesto Pasta
Keto Pesto Konjac Shirataki Pasta

“I have blogged about konjac (shirataki) noodles before – they are the bomb! Made out of the konjac root, companies (over time) have perfected a noodle-looking food that is virtually carb-free, I can fool myself into thinking I am enjoying a good pasta. They are high in fibre, very filling and even look like the real thing. Available in ‘rice’, ‘noodles’, ‘penne’ and ‘fettuccine’ (< my favourite), they are indeed a godsend for those on keto / low-carb diets. You also cannot go wrong with an excellent homemade Basil Pesto. My recipe is unbeatable and I highly encourage you to whip up a batch at home – you will never eat store-bought again. By all means, add a lovely portion of grilled chicken to it, just include it in your macros.” – Monya
