The air fryer’s rapid circulation of hot air results in a crispy exterior while keeping the meat juicy and tender. While the chicken thighs cook, prepare the creamy sauce. Blitz the sauce ingredients and simmer on the stove top for a few minutes until it thickens slightly.
 
Once the chicken thighs are golden brown and cooked through, remove them from the air fryer and serve with the creamy sun-dried tomato sauce. The combination of the crispy chicken and the tangy, velvety sauce is both delicious and satisfying. The air fryer ensures a perfect texture, while the sauce adds a burst of flavour.

Chicken with Creamy Sun-dried Tomato Sauce

Beautifully cooked chicken thighs served with a sharp and creamy sun-dried tomato sauce. Serve with your favourite greens on the side.

Ingredients

For the chicken

  • 4 large chicken thighs, skin-on
  • 1/2 tsp garlic powder
  • freshly ground black pepper

For the sun-dried tomato sauce

  • 60 g (2.1 oz) sun-dried tomatoes, drained from packaging oil
  • 50 g (1.8 oz) crème fraiche
  • 50 g (1.8 oz) double cream
  • 2 TB water
  • 1 TB tomato concentrated puree
  • rendered fat from the air-fried chicken

To finish

  • sea salt flakes
  • favourite greens on the side, NOT included in macros
  • small handful parsley, finely chopped

Instructions

  • Cover all sides of the chicken thighs with the garlic powder and plenty of freshly ground black pepper. Place into the air-fryer.
  • I used the air-fryer setting (180°C) for 25-26 min only. This is our standard when using chicken thighs - and it results in super-crispy skin and perfectly cooked soft flesh (lush).
  • While the chicken is cooking, chop the drained sun-dried tomatoes and place into a mini food processor / food chopper along with the creme fraiche, double cream, water and tomato concentrate. Blitz until smooth (you may need to scrap down the sides every now and then to achieve an even blitz).
  • Once your chicken is done, remove it from the air-fryer and set aside to keep warm. Tip all the rendered fat collected in the air-fryer into the food processor.
  • Blitz again to emulsify, then pour the mixture into a non-stick pan. Stir well until the mixture warms through and reduces to a lovely thick consistency.
  • Serve the chicken pieces with the sauce and scatter over sea salt flakes. Delicious with your favourite greens on the side - or with cauliflower mash / rice to mop up that lovely sauce! A scattering of finely chopped parsley will finish your masterpiece!
