“SIGH… I love my air-fryer. Not only because even Funnyman can use it, but its gives consistently fabulous results. We love chicken thighs, and after only 25 minutes later, we are left with crispy skin and succulent flesh: its LUSH! I don’t waste the fat and juices that run off, but instead tip it all into a quick, punchy sauce made using sun-dried tomatoes and a few other bits. This recipe is so lovely. Enjoy it with your favourite greens on the side (excluded in macros), but a cauliflower mash or cauli-rice would be equally delicious to mop up the lovely sauce.” – Monya

“I originally started the development of this keto chicken and chilli soup to be a chicken version of chili con carne. I thought it would be great served over Cauliflower Rice, Cauliflower Mash or even Konjac ‘rice’. However, midway through cooking, I stopped and realised that this would make a flavoursome soup! This lovely dish yields three servings, but if you choose to cook for more, use the plug-in on the recipe below and increase the yield amount.” – Monya

“Deliciously zingy and packed with flavour, this simple lemon thyme chicken dish requires minimum effort and cleaning up. I fry chicken thighs skin-side down to render and crisp the skin, then cook them in a lemon, garlic and thyme chicken stock (skin-side up). I then took it one step further, and reduced the strained cooking juices to a thick, full-flavoured glaze. I brush this over before serving. Serve with some lovely vegetables – see the SIDE DISHES on this site for some inspiration.” – Monya

“This spicy zuppa Toscana is a rich, deeply-flavoured family chicken dish. Funnyman and I love spicy food so I added a whopping half tablespoon of ground cayenne pepper which added a satisfying ‘kick’. However, you can omit it if you are cooking this for kids, or reduce the amount for the those who don’t like spicy food. This creamy chicken dish can be enjoyed over Cauliflower Mash, Cauliflower Rice or shirataki / konjac noodles. It’s absolutely delicious!” – Monya
