“Who doesn’t love – and long for – chocolate muffins? Here, I made the most deliciously moist keto-friendly chocolate muffins. I snuck in some ground chia and ground flax which not only add a lovely texture – but fibre and nutrients. These chocolate muffins are lovely and will freeze well too.” – Monya

“How cute is this breakfast? I bought several mini cast-iron pans so that I can make this breakfast for house guests. This Shakshuka is super simple: the cooked tomatoes are spiced with ground cumin, cayenne and smoked paprika. An egg is then cracked into the centre and baked to perfection. To finish, I used smoked sea salt flakes to season. I must, admit though, there is a massively improved, “pimped” version of my Shakshuka in my cookbook Keto Kitchen (which came out long after this blog post).” – Monya

“This eggs in spinach is a quick, nutritious breakfast-for-two that you can take to the table and tuck into with your loved one. It would also go very well with a slice or two of toasted Quick Keto Chia Bread. Funnyman likes this with a dash of hot sauce drizzled over. You could do the same, but that will depend on how brave you are so early in the day!” – Monya

“The spicy relish served with these courgette fritters really is the star of the show. It cuts through the richness and adds a spicy, sweet and acidic freshness. This recipe may be too rich served as a side dish, but it will make a great breakfast option. Squeezing all the moisture from the grated courgettes is essential: I use inexpensive muslin / cheesecloth. Be sure to check out the other Breakfast ideas on the site.” – Monya
