BBQ Ribs in Tamari & Skinny® Maple Syrup (Low carb)

My butcher hooked me up with a whopping kilogram of pork ribs, so I got to work creating a delicious glaze to brush over the ribs while we braaied one day on lock down. I used tamari (gluten-free soy sauce) and delicious The Skinny Food Co Sugar-free Maple Syrup along with other few bits. This will sufficiently feed 4 hungry people at your next BBQ – but I especially want you to try my version of pre-cooking the ribs ahead of going onto the grill. I wrap them in a completely air-tight parcel of foil, so they literally steam in their own juices for 3 hours. They fall off the bone. Heaven.

Lamb with Fresh Tomato & Garlic Relish (Keto)

This simple relish of fresh tomatoes and raw garlic came about one night by accident. I can’t recall what I was making, but I added a good quality olive oil and a pinch of salt – and it became my new favourite condiment! I said to Funnyman ‘this would be perfect over lamb!’ So… here we are. I made it again to serve with lamb cutlets and it is sensational! Who would have thought that two simple ingredients could deliver so much in flavour. A few key things I must highlight: Use organic, ripe tomatoes and the fattest garlic clove you can find. Plus, I hope you have a good-quality olive oil. Regarding the garlic: you will be eating it raw, so I must stress that the cloves should not be finely chopped, but rather crushed effectively using a garlic press. This is best for texture and flavour, so please invest in one if you haven’t already. The batch of relish makes enough for 6 people at your BBQ to enjoy and the macros are calculated on two cutlets per person. If you choose to cook up less lamb, simply add the leftover relish to a salad or stir through warm vegetables. Play around: that’s what cooking is all about! Enjoy!

Lightly-spiced Keto Pork Ribs

This is a simple and tasty way to prepare pork ribs if you are steering clear of store-bought marinades which often contain sugar. A spice mix is rubbed onto the meat before it’s very tightly wrapped and slow-cooked to perfection. I finish it off with a very good quality drizzle olive oil and sea salt flakes before tucking in! (Note: You could use a rack of ribs, but at the time of making this dish, I could only find pork ribs that had already been cut, as pictured.)

Lamb Chops with Rosemary Butter (Keto)

I am quite vocal about how lamb is my favourite meat, I love it! Here, my butcher hooked me up with fantastic cutlets and we simply cooked them on the braai (BBQ). Lamb and rosemary go so well together, so I made a quick flavoured butter beforehand to melt on top and #PimpMyChops. And, since its the Bank Holiday weekend coming up here in the UK, why not enjoy these with my Tear-and-Share Keto Garlic Bread and a lovely salad on the side.
