“You can’t go wrong with a great Homemade Pesto which offers massive flavours. Here, I cooked spinach for a lovely buttery texture, then simply stirred it into Basic Keto Gnocchi. This may seem like a rich meal for two, so stretch it to four as a side dish. Then, halve the macros accordingly. In this recipe, I use “gnocchi” made from almond flour, but if you prefer a nut-free version, I have a fabulous Cheesy Gnocchi in my second book Lazy Keto Kitchen (2021).” – Monya

“Homemade basil pesto doesn’t last very long in our home due to its versatility, dynamite flavour and the ease of which it is made. Spend two extra minutes toasting the pine kernels and lightly frying the rawness out of the garlic and you will be good to go. Fresh pesto is superior to anything you will buy in the store – nothing beats it. It is fresher in flavour, and more vibrant in colour. “I have made this dish so many times and it just keeps getting better. It’s not easy doing something remarkable with chicken breasts: they can be somewhat underwhelming and can easily dry out. These are juicy, moist and bursting with flavour. I love smoked paprika and rubbed the breasts with it before frying on both sides, then stuffing and finishing in the oven. The stuffing was simply two ingredients that when combined are simply out of this world (one being my Homemade Basil Pesto which you really must try).
