“This paprika steak salad with veg and feta is a great way to enjoy rib-eye steaks in a ‘lighter’ way. It is a delicious, filling and rather colourful warm salad that can be thrown together in 30 minutes! Do not skip the smoked paprika, its the most beautiful dominant flavour in this dish (and different to regular ground paprika, so please try and source it). It is available at all stores, but if you still struggle, you can get it online. The servings are very generous, so if you prefer, you could stretch this to 3-4 people instead as a lighter lunch. For me though, well, I could never share my steak. ” – Monya

More on Paprika Steak Salad with Veg and Feta…
A tantalizing ribeye steak salad awaits, bursting with flavours that will make your taste buds dance. The succulent ribeye steak takes centre stage, perfectly seared to a juicy medium. The smoky allure of paprika infuses the meat, creating an aroma that sets the stage for an extraordinary dining experience.

Accompanying the steak are grilled courgettes and vibrant red peppers, kissed by the flames of the grill, imparting a delightful, charred essence. The vegetables offer a crisp and refreshing contrast to the richness of the steak, enhancing the overall balance of flavours.
To elevate this creation, a final touch is added – crumbled feta cheese. Its creamy, tangy notes complement the robustness of the salad. The feta’s saltiness enhances each bite, creating a harmonious symphony of taste sensations.
Each component of this dish works in harmony. The tender ribeye, bold and smoky with a hint of paprika, meets the grilled courgettes and red peppers, their natural sweetness enhanced. The grand finale arrives with the feta, adding a creamy finish that lingers on the palate. Prepare to indulge in a culinary experience that will leave you craving for more with this irresistible celebration of flavours.

Paprika Steak Salad with Veg & Feta
Per serving
Ingredients
- 1 red bell pepper (capsicum), roughly chopped
- 330 g (11.6 oz) courgettes (approx. 2 medium), roughly chopped
- 2 TB olive oil
- salt and freshly ground black pepper
- 2 rib-eye steaks (approx. 220g each)
- 1 tsp smoked paprika
- 1 TB lard or ghee, to fry steaks
- 1/2 lemon, juice only
- 70 g (2.5 oz) full-fat feta cheese
- 35 g (1.2 oz) wild rocket
- sea salt flakes
Instructions
- Preheat the oven to 200°C (fan oven). This is 220°C for conventional ovens (or 425°F / gas mark 7).
- Combine the chopped courgettes and red pepper in a bowl. Drizzle over the olive oil and season generously with salt and freshly ground black pepper. Spread out on a baking tray lined with parchment paper.

- Bake in the middle rack of the oven for 15 minutes. I always stir the mixture and rotate the tray halfway through.
- While the vegetables are baking, remove the steaks from their packaging and pay dry with good-quality kitchen paper. Scatter the smoked paprika on all sides and season with salt and freshly ground black pepper.
- Heat the fat of your choice in a large non-stick pan over high heat. Fry the steaks until done to your liking. I like to get it nicely charred on the outsides, while still medium rare in the middle.

- Remove the steaks from the pan and set aside on a plate. Cover with foil and leave to rest for 5-8 minutes before slicing into thinner strips.
- While the steaks are resting, squeeze the lemon juice (catch the pips!) into the same pan (off the heat) and scrape around, as these tasty juices should not be wasted.

- Serve the cooked vegetables with the rocket, sliced steak and crumbled feta. Drizzle over any steak resting juices (as well as the lemony liquid in the pan). Season with salt flakes and additional black pepper, if needed. This warm salad is best served immediately (else the steaks and the fat used to cook them will congeal unpleasantly).NOTE: If you feel the salad needs a little more acidity, another squeeze of fresh lemon (if you still have half a one kicking about) would be LOVELY.
