Chicken with Creamy Pesto Dip and Parmesan Salad

A delicious way to enjoy simply chicken breasts. Here, they are sliced and served with an easy pesto-flavoured creamy dip and an even easier, dynamite-flavoured salad!

Ingredients

Forthe chicken & creamy pesto dip

  • 4 chicken breasts, skinless and deboned
  • 2 tsp ground paprika
  • 1 tsp garlic granules / garlic powder
  • 1 TB olive oil
  • 200 g (7 oz) full-fat creme fraiche
  • 60 g (2.1 oz) basil (green) pesto
  • salt, salt flakes and freshly ground black pepper

Forthe salad

  • 20 g (0.7 oz) pine nuts
  • 2 tomatoes, finely chopped
  • 2 cloves garlic, crushed with a garlic press
  • 3 TB olive oil
  • 2 tsp lemon juice
  • 300 g (10.6 oz) iceberg lettuce, thinly sliced (approx. ½ head)
  • 40 g (1.4 oz) grated Parmesan / Parmigiano cheese

Instructions

  • Preheat the oven to 200°C (fan oven). This is 220°C for conventional ovens (or 425°F / gas mark 7). Line a baking tray with baking paper.
  • Season all sides of the chicken with salt, pepper, paprika and garlic granules. Place on the tray and drizzle with the olive oil. Bake in the oven for 20-22 minutes, then remove and leave to rest for several minute before slicing and serving.
  • Meanwhile,combine the creme fraiche and pesto in a bowl for your creamy pesto dip. Tasteand adjust the seasoning with salt and pepper if you feel it needs it.
  • For the salad, toast the pine nuts in a dry, non-stick pan over medium high heat. This won’t take long, 1-2 minutes. Once golden, remove and set aside.
  • Combine the chopped tomatoes and the crushed garlic in a bowl. Season with a pinch of salt flakes and pepper, then stir in one tablespoon of the olive oil and the lemon juice. Combine the thinly sliced lettuce with the grated Parmesan and remaining olive oil. Toss well to coat, then fold in the tomato garlic mixture. Scatter over the toasted pine nuts.
  • Serve the rested, sliced chicken with the pesto dip, and season the chicken with salt flakes and pepper. Enjoy with the tomato Parmesan salad alongside.
USEFUL TIPS:
  • If your chicken breasts were very big, you may need an extra minute or two in the oven. Check the thickest piece - it should not be pink in the centre after resting for 3-4 minutes.
  • Pesto is usually gluten-free, but always check your labels if you are using store-bought condiments.
  • The salad and the creamy pesto dip are lovely, so enjoy either of them with your favourite meat or fish.
