This is a simple and delicious coleslaw made using my Easy Homemade Mayonnaise. I also ‘quick-pickled’ finely chopped red onions (which add even more crunch) before stirring through freshly chopped parsley for additional fresh flavour! Hello low carb summer BBQs!

Baked Onions with Thyme Butter (Keto)

This is a delicious and interesting side dish using baked onions drizzled with a flavoured herb butter. The onions bake away in a tightly-packed foil parcel down to a sweet, roasted flavour and the thyme butter lifts it to a sensational level!

Creamy Garlic Broccoli with Tomato Relish (Keto)

I love cream-baked broccoli: its a simple dish which I throw together quite often. In this version, however, I enhanced the creamy mixture with sour cream and full-fat cream cheese and served the end-result with one of my favourite new homemade condiments: a quick relish made from finely chopped tomato and garlic. This dish is very rich and indulgent and will suitably serve 4 as a side veg option. THIS RECIPE IS ACCOMPANIED WITH A VIDEO. Brussels Sprouts in Bacon Butter (Keto)

This is a decadent and rich side vegetable option which can be enjoyed any time of the year. I sliced up the Brussels sprouts to ensure even cooking and a lovely texture, and smothered the whole lot in a very buttery bacon mixture. It needed only a little seasoning. Not too bad for only 20 minutes…

Cauliflower Steaks with Smoked Paprika Butter (Keto)

I love vegetables and never run out of ways to create interesting side dishes to enjoy alongside our meat or fish. Cauliflower is one of my favourite. Here, I simply cooked two ‘steaks’ (intact pieces cut from the centre of a large head) and made a quick, tasty butter using smoked paprika. (Smoked paprika has an intense and important flavour and much better than regular paprika, so I encourage you to make the effort to source it).
