Avocado Cheesecake Lollies (Keto)

I churn out a lot of keto lollies for Funnyman. A LOT. While I don’t have a sweet tooth (I never have, even life before keto), but Funnyman loves his after dinner treats, so I try and keep things interesting for him by switching things up and changing the flavours of the lollies I make (in addition to the other sweet treats) I make for him! Here, I added cream cheese to the mixture – and it changed the texture in a beautiful way! Without telling him, I added avocado to sneak in some fibre and additional goodness and healthy fats… and this was how my Avocado Cheesecake Lollies were born! Hand on heart, these are now his favourite lollies. And just in case you were wondering – the flavour of avocado does not come through at all: just creamy, indulgent sweetness.

I always have a batch of lollies for Funnyman in the freezer (they usually take me less than 10 minutes to make once a week). He loves them as after-dinner treats, and enjoying them most nights has never knocked him out of ketosis. This time, I decided to go back to basics with a simple vanilla-cream. He was not disappointed. Unlike the majority of the other lolly recipes on this site, here I used mostly double cream and only a dash of Greek yogurt for some acidity. I scraped the seeds from a good quality Madagascan vanilla pod (hence the name), but if you are on a tighter budget, you can get away with two teaspoons of vanilla essence you probably already available in your pantry. (Just be sure to check the labels: vanilla paste contains sugar)…

These creamy lollies were made with yogurt and cream and enhanced with the lovely flavour of orange blossom. I added a little orange food colouring, but that is entirely optional. These lollies come in at only 3.6g carbs per serving, and Funnyman is still happily plowing through them and still losing pounds…
