Tomato soup holds a special place in the hearts of many people as a comforting and nostalgic dish. Its appeal is multifaceted, transcending generations and cultures.

When made at home, tomato soup can be tailored to suit a low-carb diet without sacrificing flavour. The umami taste of tomatoes, and the depth of flavour and texture from the addition of cream contributes to the appeal.
My version is dead-easy since I rely on tinned chopped tomatoes. The reason I like the tinned kind is because they are without skins and mostly without seeds.
However, you could use fresh if you like. Making tomato soup from scratch allows you to control the ingredients and adjust the recipe to your specific dietary needs. Plus, the process of preparing and cooking the soup can be therapeutic and rewarding, enhancing the overall comfort factor.

Cuppa Creamy Tomato Soup
Per serving
Ingredients
- 1 can chopped / crushed tomatoes
- 200 g (7.1 oz) chicken stock
- 50 g (1.8 oz) double cream
- salt and white pepper
- chives, snipped to garnish
Instructions
- Empty the contents of the tinned tomatoes into a pan. Add the chicken stock and bring to the boil.
- Reduce to a low simmer and cook (covered with a lid) for 10 minutes, stirring regularly.
- Remove the pan from the heat and use a hand blender to blitz to a smooth consistency.
- Stir in the cream and gently warm the soup through. Season the mixture with salt and white pepper, as needed.
- Divide between two cups and drizzle with a little extra cream and garnish with snipped chives if you are feeling fancy like I was.
