This version of chicken parm is one of those low carb / keto midweek meals that may seem simple at-a-glance, but will still deliver great, familiar flavours. The most important thing is that the chicken is not overcooked. While skinless breasts lend themselves to be great options to flatten and use in dishes like this, they are notorious for drying out. “Oh my… the flavours in this bacon and tomato keto gnocchi! I used smoked bacon lardons because they are chunkier (and fattier) than simply dicing up thin bacon rashers yourself. They also render so much glorious fat and flavour when frying up, and this is key to this dish. The tomatoes add lovely sweet acidity. If you can manage 9.9g carbs per serving, this will sufficiently feed 2 people. But it is very rich and filling, so you could divide this into 4 smaller servings and halve the macros accordingly. In this recipe, I use “gnocchi” made from almond flour, but if you prefer a nut-free version, I have a fabulous Cheesy Gnocchi in my second book Lazy Keto Kitchen (2021).” – Monya
