“You will love these stuffed spicy courgettes! This is a lovely, easy dish which takes a little long, but that’s only because I didn’t want to discard the courgette flesh that I scoop out to make the ‘boats’. Instead, I cook it down for a long time until it caramelises for maximum flavour, then incorporate it into the beefy mince stuffing. Using 6 courgettes here means 4 people can enjoy three boats each. ” – Monya

“This calamari and courgetti bowl is a quick and easy stir-fry using squid rings and spiralised, roughly chopped courgetti. Plus, all the favourite Asian-inspired flavours to bring the bowl to life! Lovely eaten warm or chilled (meaning you could take this to work with you). Enjoy!” – Monya

“Just two ingredients! This is barely worthy of a blog post, but I wanted to share it anyway. I think it is a simple and tasty way to enjoy courgettes. Here, I fry slices of courgettes (cut approx. 1cm thick at an angle for more surface area) until caramelised. Then I serve it warm with a little feta crumbled over. If seasoned well, these caramelised courgettes are truly delicious and the full-fat feta adds a lovely creamy sharpness.” – Monya
