So simple and oh-so cute, these "Santa Hats" are bite-sized morsels you can put out at your Keto Dessert Christmas spread this year! Only 1.8g carbs per "hat", so go on - have two!
Make the brownie recipe from KETO KITCHEN (page 137) - but there is no need to make the ganache layer. Once cooled a little, remove from the dish and set aside (uncut) to cool. *The preparation times indicated on this recipe do not include the making of the brownies*
Trim and discard the leafy stalk end off each strawberry with a sharp paring knife. My total weight from 20 trimmed small-medium strawberries was exactly 250g / 8.9oz - and this was how the macros were calculated.
This time of year (in the UK), the strawberries aren't as generous in size as the ones we snack on while watching Wimbledon. However, that suits me - and this recipe - just fine because I wanted these to be glorious bite-sized treats where you can pop the whole thing in your mouth!
Have a 3cm (1.5") diameter cookie cutter at hand. If you have the same set I do (the green link above under "equipment" or the image ad under this recipe will point to the exact set I have): its the second smallest one.
Press out 20 small pieces of the cooled, untrimmed brownie.
When you press them out, do so tight and close because it means you will have at least 3 full, actual brownies (as pictured below) which you can enjoy later, or even wrap up and freeze. Also - do not discard those precious off-cuts - rather scroll down for a quick idea on how to use them.Just to ease your mind, after much (very anal-retentive and careful) weighing: the macros for these Brownie Santa Hats are based on using the 20 pieces of brownie where each one was approx. 13g / 0.6oz each. This is tricky business because your cookie cutter may be slightly bigger than mine. Remember too, that your strawberries will differ in size and its a flawed science to give EXACT macros. However, the macros I provide (using excellent, professional software) will at least give you an excellent indication.
The next part is easy! Simply combine the cream cheese, sweetener and vanilla essence together in a bowl. Fill a piping bag (fitted with a large star nozzle) with the mixture and pipe a small amount onto each brownie piece.QUICK TIP: When you open a tub of cream cheese (also called soft cheese), drain off the excess liquid before using. Believe me, that small amount of excess wateriness in the packaging can make a difference. (And this is a very handy tip when making any fathead dough recipes too.)
Top with the strawberries (they already look cute, don't they?)
Switch the piping bag nozzle to a very small star nozzle and pipe a tiny amount on the top of each strawberry to finish the "hat". (It is an additional effort, but you have put so much love into these already - your guests (especially the kids) will simply LOVE it! Keep in the fridge until serving, but bear in mind that the brownie part may dry out a little if left uncovered, so you may want to get all the parts ready just before assembling and serving. **QUICK IDEA FOR YOUR BROWNIE OFF-CUTS**You may have a few strawberries left over from what you bought, and you will definitely have some of those delicious brownie off-cuts (which freeze well, when wrapped). Why don't you whip some double cream, Swerve and vanilla essence to stiff peaks, then fold through some finely chopped strawberries and roughly chopped brownie off-cuts. Drizzle with sugar-free maple syrup: LUSH!
