Preheat the oven to 180°C (fan oven). This is 200°C for conventional ovens (or 400°F / gas mark 6).
Bring a large pan of salted water to the boil while you trim the cauliflower into even-sized florets (this ensures even cooking). Boil the cauliflower until tender, then drain well in a colander and allow to steam off.
Once steamed off, tip into a suitable-sized oven-proof dish so the cauli lies in an even layer.
At the same time as the cauliflower is doing its thing, place the cream into a pan and add the rosemary sprigs. Use the back of a knife to bash the garlic cloves, then roughly chop them and add to the pan.
Place the pan over moderate heat until the cream simmers. Leave to simmer for 3-4 minutes then remove the pan from the heat, leaving the rosemary and garlic to infuse the cream for several more minutes - the longer the better. Season the mixture with salt and ground white pepper.
Strain the infused, seasoned cream over the cauliflower (discarding the contents of the sieve as they have done their job). Scatter over the Parmesan.
Bake in the oven for 20 minutes. (I know I say this a lot, but its a handy tip. Whenever I place anything in the oven, I always rotate my tray halfway through cooking. This ensures even cooking because I have found that many ovens have hot / cold spots.)
Before serving, scatter over salt flakes and freshly ground black pepper. Enjoy!
